Job summary

dnata catering is seeking a Pastry Chef for our national bakery at Coolangatta Airport. The role involves preparing and cooking various international dishes, supervising kitchen staff, and ensuring high-quality production for airline services.

• Certificate III Commercial Cookery or higher preferred or equivalent experience.
• Passion and drive to deliver high quality food to customers.
• Ability to work a 7-day rotating roster.
• Strong attention to detail and good organizational/time management skills.
• Motivated, hardworking with a positive attitude; able to work under pressure.
• Experience in a commercial kitchen environment desired; not essential.

Responsibilities

• Maintain a kitchen environment with flair, creativity and consistent quality.

• Ensure stock rotation and minimize waste.
• Prioritize workload to meet cold soak requirements and pickup times.
• Prepare complex, exotic dishes to specification.

We are looking for a motivated and enthusiastic Pastry Chef to join our busy national bakery. The ideal candidate will have a strong background in either food manufacturing and production, or large multi-function high end venues. We are looking for experience in producing consistent, high quality culinary items.

What does a typical day look like?
As one of our Pastry Chef you will be working in a busy, open plan kitchen preparing & cooking various international hot & cold meals, for our customer airlines. This will also involve supervising other kitchen staff including Catering Attendants and Casual labour hire team members.

The successful candidate will be responsible for:

• Maintaining a kitchen environment that promises flair, creativity, and consistency in the quality of menu items with consistent taste and appearance.
• Being multi-skilled and leads teams in all areas of food production and assembly.
• Ensuring correct stock rotation is adhered to, ensuring minimal/no product wastage.
• Prioritizing and manages workload to meet cold soak requirements and pickup times.
• The preparation of complex, and exotic dishes to specification.
• Providing feedback regarding shortfalls in production process to improve process and exceed customer service expectations.
• Supervising and trains kitchen staff as required.
• Performing activities working to passenger load requirements and Airline specification.
• Participating in customer menu development and presentation.
• Complying with hygiene, safety, quality, customer service, right first time and performance standards.
• Complying with all dnata Food Safety requirements including Personal Hygiene, Good Manufacturing Practice (GMP), Food Handling and Storage Requirements.
• Complying with Customer and Legislative HACCP requirements.

What do you need to be successful in securing this role?

• Certificate III Commercial Cookery or higher qualifications is preferred or equivalent level of experience
• Passion & drive to deliver high quality food to our customers.
• Ability to work a 7-day rotating roster
• Strong attention to detail.
• Good organizational & time management skills.
• Must be motivated, hardworking & have a good attitude.
• Ability to work under pressure in a busy kitchen.
• Previous experience in a commercial kitchen environment preferred but not essential.
• Preparing, cooking and baking various dishes, pastries and desserts to required specifications.
• Applying varied and complex knife skills.
• As you will be working in the Aviation Services industry, you will be required to obtain a clear National Police Check.
• Availability to work 38 hours/week, as this role is a full-time permanent position.
