Birdon is seeking a casual Marine Cook to prepare and serve nutritious meals for crew on a Darwin-based vessel. The role manages galley operations, maintains high hygiene standards, and ensures compliance with maritime regulations.

The Cook will work an 8-person crew schedule across a 21-day cycle, with provisioning during port calls and strict adherence to AMSA requirements.

Qualifications

  • Marine Cook Certificate of Proficiency issued by AMSA.
  • Completion of AMSA-approved cookery courses (MAR3017 or SIT30813).
  • Valid Certificate of Medical Fitness (AMSA Approved).
  • Completion of STCW Short Courses: Basic Safety Training, Fire prevention and fighting, First Aid.

Responsibilities

  • Plan, prepare, and serve meals for crew and passengers.
  • Maintain galley cleanliness and hygiene in storage areas.
  • Monitor inventory and rotate stock to minimise waste.
  • Ensure compliance with AMSA regulations and STCW standards.
  • Apply safe food handling practices and health/safety protocols.
  • Assist in provisioning and loading supplies during port calls.
  • Maintain records of meals served and hygiene checks.
  • Support environmental protection practices, including waste segregation.

As we continue to grow, so too does our team. We are looking for the right candidates to take on the role of Marine Cook. This is a casual position, with the basic operating profile of 8 crew on a 21-day even time roster.


These vessels operate out of Darwin, with local and FIFO roles available.


Position Overview:


The Cook is responsible for preparing and serving nutritious, high-quality meals for crew and passengers onboard the vessel. This role includes managing galley operations, maintaining hygiene standards, and ensuring compliance with maritime safety and food handling regulations. The Cook plays a vital role in crew wellbeing and contributes to the smooth operation of the vessel.

Key Accountabilities:

  • Plan, prepare, and serve meals in accordance with dietary requirements and voyage duration
  • Maintain cleanliness and hygiene in the galley and food storage areas
  • Monitor food inventory and manage stock rotation to minimise waste
  • Ensure compliance with AMSA regulations, including Marine Order 70 and STCW standards
  • Apply safe food handling practices and adhere to health and safety protocols
  • Assist in provisioning and loading supplies during port calls
  • Maintain records of meals served, inventory used, and hygiene checks
  • Support environmental protection practices, including waste segregation and disposal.

Qualifications, Experience and Skills:

  • Must be an Australian Citizen and checkable background to obtain a baseline security clearance
  • Marine Cook Certificate of Proficiencyissued by AMSA
  • Completion of an AMSA-approved cookery course, such as:

MAR3017 Certificate III in Maritime Operations (Marine Cookery), or

SIT30813 Certificate III in Commercial Cookery, or

Equivalent training recognised by AMSA

  • Valid Certificate of Medical Fitness (AMSA Approved)
  • Completion of STCW Short Courses:
  • Basic Safety Training
  • Fire prevention and fire fighting
  • First Aid
  • Strong organisational and time management skills
  • Ability to work independently in confined and remote environments
  • Prior experience working on smaller vessels
