Job summary

The Ocean Grove Hotel is seeking an experienced head chef with management responsibilities to lead a busy kitchen in Ocean Grove, VIC. The role is full-time and permanent with a starting salary of $80,000 under clause 25 of the Hospitality Industry General Award.

You will manage staff, menu development, HACCP compliance, stock control and cost of goods, while ensuring quality and consistency across meals. The position requires 38 hours per week over five days, with shifts including evenings,

Qualifications

• Must hold Diploma in Hospitality Management and related certifications in kitchen management.
• Experience managing staff in a busy kitchen.
• Understanding of food safety and HACCP principles.

Responsibilities

• Lead and manage kitchen staff and workflow.
• Develop menus and specials for events and functions.
• Ensure portion control, stock rotation, waste minimisation and cost of goods.
• Maintain HACCP compliance and food safety standards.
• Mentor team with clear guidance and strong communication.
• Roster across day shifts, evenings, weekends and public holidays.
