Job summary

Cable Beach Club Resort & Spa in Broome seeks an Executive Sous Chef to lead kitchen operations across four outlets and maintain high standards of quality and safety.

The role requires formal Commercial Cookery qualifications and hotel/resort management experience, with a WA driver's license. Attractive rewards include onsite accommodation and a KPI bonus.

Qualifications

• Formal qualifications in Commercial Cookery or equivalent.
• Experience in middle to upper-level management in a large hotel/resort.
• Experience in a multi-outlet hotel/resort is preferred but not essential.
• Knowledge of Food Safety and other workplace health and safety practices.
• A current WA driver's license.

Responsibilities

• Ensure product quality and service standards are consistently high.
• Work with the Executive F&B Manager on menu creation.
• Train and develop up to 40 employees – Chefs, Apprentices and other kitchen staff.
• Ensure compliance with WHS requirements at all times.
• Control and analyze departmental costs on an ongoing basis.
• Devising initiatives to meet financial targets.

We are currently seeking for an experienced Executive Sous Chef, the position is a balance between personally preparing high quality food and being operationally responsible for supervising and directing all kitchen personnel, while interacting and developing relationships with internal and external customers and suppliers.

Key Responsibilities Will Include

• Ensuring product quality and service standards are of a consistently high standard;
• Working with the Executive F&B Manager on menu creation;
• Training and development of up to 40 employees – Chefs, Apprentices and other kitchen staff;
• Ensuring all employees are complying with relevant workplace health and safety requirements at all times;
• Control and analyze departmental costs on an ongoing basis;
• Devising initiatives and strategies to ensure financial targets are met

The Successful Candidate Will Need To Demonstrate

• Formal qualifications in Commercial Cookery or the equivalent;
• Experience working at middle to upper-level management within a large 4 or 5 star Hotel/Resort;
• Experience working in a multi-outlet Hotel/Resort is preferred but not essential;
• A thorough knowledge of Food Safety and other workplace health and safety practices;
• A current WA driver's license
