The Railway Hotel is a long-standing, family-owned and operated establishment located in the historic township of Castlemaine within the goldfields area in central Victoria. We are seeking a dedicated and passionate Chef to join our culinary team. This is a full-time position offering a competitive remuneration package and the opportunity to work in a unique, vintage venue with a rich heritage.

Your Role:

As one of our Chefs, you will:

  • Work alongside the Head Chef to ensure exceptional food quality and presentation.
  • Design and execute menus that celebrate local produce and seasonal ingredients.
  • Oversee food preparation, cooking, and plating, ensuring a high level of quality and presentation at all times.
  • Adhere to food safety regulations and guidelines to maintain compliance with health and safety standards.
  • Effectively manage and mentor the kitchen team, providing guidance and support as needed.
  • Contribute to managing kitchen budgets, inventory, and food costs.

What You’ll Bring:

  • Relevant Trade Qualification: Certificate IV in Commercial Cookery, Diploma, or an equivalent qualification in culinary arts.
  • Minimum 1 year of work experience: in a similar chef role.
  • Strong culinary skills with a passion for creating innovative and delicious dishes.
  • Highly adaptable and able to perform in high-pressure service periods.
  • Excellent time management, multi-tasking, and problem-solving abilities.
  • A team player with great communication and presentation skills.
  • Experience in managing kitchen operations, including stock control, food cost management, and ensuring compliance with food safety regulations.

Competitive salary of $70,000 – $80,000 + super (depending on the role and level of experience).
