Queensland Government is seeking a Correctional Manager, Food Services to lead and coordinate the centre's food services, ensuring daily operations run smoothly and safely. You will oversee kitchen facilities, dietary adherence, stock management, procurement, and diet planning in line with guidelines.

You will liaise with programs staff to develop training, monitor safety and hygiene standards, manage budgets, and coordinate vendor contracts and standing offers to optimise quality and cost.

The primary accountabilities of the Correctional Manager, Food Services include:Provide advice and direction to Management on the Centre's food safety programMaintain the efficient and coordinated operations of the centre's food servicesImplement and ensure daily quality assurance programs are conductedPromote and support standards for food safety and qualityImplement dietary standards of the Centre's Menu in accordance with Queensland Dietary GuidelinesOversee the maintenance of all kitchens and where applicable, other industry equipment, to ensure that it is maintained in maximum operating orderContribute and monitor centre budget allocation for food servicesProvide advice to the Centre's Management and Custodial/Financial Directorate on all matters pertaining to the food services functionsMonitor the operations of catering staff and other relevant staff where applicable.Ensure the food services function is performed in accordance with appropriate hygiene and quality and WH&S standards.Liaise and develop training packages with programs staff regarding the work training opportunities available to prisoners.Monitor Trade Instructors on the daily supervision of prisoners assigned to the food services function.Implement and monitor Food Safety & Food Handler Training for all prisoners undertaking work within the Centre Food Services areaCoordinate and assist in the training and reporting of all vocation (VET) training for HospitalityMonitor and evaluate WH&S processes within the Food Services areaCoordinate the procurement, receipt, issue, custody and maintenance of all food supplies.Liaise and coordinate Standing Offer arrangements on behalf of the centre for all Food Services productsMinimize wastage through efficient and effective menu and dietary controlMonitor and maintain accurate stock control system.Liaise with external suppliers and negotiate contracts in order to achieve the most cost effective purchase of food supplies and machineryEnsure that all goods are obtained in accordance with relevant purchasing guidelines.Formulate budget submissions for the food services function.Monitor and control expenditure to ensure that the cost centre remains within its allocated budget.Develop and plan menus, including special needs dietsThe role description provides the minimum requirements for the role.
