Lucas Collective is seeking top chefs for its Sydney team, including Grill Americano Sydney, a Venetian-style steakhouse. This role seeks industry-leading talent with premium dining experience and a track record in high-volume service.

Qualifications

• Chef with premium au-la-carte restaurant experience.
• Experience with Italian cuisine is advantageous.
• Candidates with management experience should understand budgets/targets.
• Strong leadership with focus on staff development.
• Evidence of leading high-performing teams.
• Ability to work under high-pressure service periods.
• Solid food safety knowledge and practices.
• Proven relationship-building abilities.
• Excellent organisational and time-management skills.
• Familiarity with Deputy or similar time-tracking tools, H&L and MS Office.
• Excellent communication and presentation skills.
• Willingness to work weekends and public holidays.
• Qualification in Commercial Cookery or equivalent.

We are looking for the industry’s best chefs to join our team in Sydney.

The Ideal Candidate Must Have:

• Chef experience in a premium a-la-carte restaurant
• Experience with Italian cuisine is advantageous
• Management candidates must have solid understanding of management practices and financial budgets/targets
• Exemplary leadership with focus on staff development
• Demonstrated experience in leading a high-performing team
• Highly adaptable and able to perform in high-pressure service periods
• Solid understanding of food safety standards
• Proven ability in building effective relationships
• Organisational and time management skills
• Experience using Deputy (or similar Time & Attendance system), H&L, and proficiency in Microsoft Office suite
• Excellent communication and presentation
• Able and willing to work weekends, public holidays, opening and closing shifts
• Qualification in Commercial Cookery or equivalent
