Job summary

Charlotte Group is seeking an experienced Head Chef or strong Sous Chef to lead our brunch and elevated café dining across Sydney venues. This is a daytime, no-nights role with supportive senior management and creative scope to shape our breakfast and lunch offerings.

You will drive seasonal menus, mentor the kitchen team and ensure top-quality, consistent dishes while maintaining food safety and cost control.

Qualifications

• Experience in busy brunch kitchens.
• Ability to lead and develop a team.
• Strong commercial sense and menu creativity.

Responsibilities

• Create and refine seasonal breakfast, brunch and lunch menus.
• Lead by example during service, maintaining quality, pace and consistency.
• Train and support our chefs and cooks, building their skills and confidence.
• Develop clear recipes, prep systems and plating standards across venues.
• Manage ordering, stock, food costs and waste.
• Maintain strong food safety and kitchen organisation standards.
• Work closely with our senior management team to improve our food offering and kitchen operations.
