Gilson in South Yarra is seeking a hands-on Bar Manager to lead the bar team in a busy, quality venue opposite the Royal Botanic Gardens. You will oversee service pace, stock control, and cost management while mentoring staff and coordinating with management on events.

We value a calm, efficient operator with strong COGS understanding, excellent organisation, and a commitment to high standards. RSA is required for this role and the position offers strong base pay and growth opportunities.

• Experience running or senior bartending in a busy, quality venue.
• Highly organised with strong stock control and ordering experience.
• Fast, efficient, and calm behind a busy dispense bar.
• Commercially minded: you understand COGS, wastage, and margins.
• Takes pride in a clean, well-maintained, well-run bar.
• A team player who leads by example.
• RSA required.

Domain Botanical Business – South Yarra VIC

This is a hands-on Bar Manager position at Gilson, an Italian-influenced all-day restaurant in South Yarra opposite the Royal Botanic Gardens. You'll spend much of your time behind the bar during service, keeping drinks moving quickly and to standard for a busy restaurant floor, while taking ownership of how the bar operates.
