Job Description: Cellar Hands and Lab Assistants

Working with our Winemakers and permanent cellar crew, we are looking for enthusiastic and hardworking cellar hands with a genuine passion for making wine at the highest level. We offer diversity in our vintage cellar hand roles and encourage an environment of learning.

Specific job responsibilities for Cellar Hands include:

  • Weighbridge and fruit receival
  • Crusher/de-stemmer operation
  • Press operation
  • Wine & juice transfers
  • Additions to tanks
  • Juice inoculation
  • Tank & equipment cleaning/sterilisation
  • Juice flotation
  • Red ferment pump overs
  • Barrel topping, stirring, filling and racking
  • Night and weekend work required

We are seeking a motivated and detail-oriented Vintage Lab Assistant who brings both technical accuracy and a strong passion for wine. Working closely with the winemaking team, this position plays a key role in supporting laboratory operations and ensuring the highest quality for our wines.

Specific job responsibilities for Lab Assistants include:

  • Conducting chemical analysis on grape, juice and wine samples to monitor pH/TA, sugar, VA, turbidity, SO2 and alcohol levels
  • Enzymatic testing for YAN, Malic acid, Glucose and Fructose
  • Conducting fining trials on juice/ wine samples
  • Daily ferment rounds, recording temperature and Baume
  • Operate and maintain laboratory equipment to a high level
  • Daily lab maintenance including hygiene and preparation of standard solutions
  • Accurate and precise data input
  • Working predominantly in the Laboratory, however occasional cellar work will be required where time permits
  • Night and weekend work required
