The Team Leader – Stewarding is responsible for supervising and coordinating the activities of the stewarding team to ensure cleanliness, hygiene, and organization in all kitchen and back-of-house areas. The role ensures that all kitchen utensils, equipment, and work areas meet hotel standards and health regulations, supporting culinary operations efficiently and safely.

Operational Responsibilities
  • Supervise daily stewarding operations, ensuring all cleaning schedules and duties are completed effectively.
  • Maintain cleanliness and sanitation standards in all kitchen areas, dishwashing stations, storage rooms, and waste disposal areas.
  • Oversee the proper handling, washing, and storage of chinaware, glassware, silverware, and kitchen utensils.
  • Ensure all cleaning chemicals and equipment are used safely and correctly, following established procedures.
  • Support kitchen and banquet operations by ensuring sufficient clean equipment and supplies are available at all times.
  • Monitor and maintain cleanliness of kitchen exhaust systems, floors, walls, and walk-in refrigerators/freezers.
Team Leadership
  • Assign duties and supervise the stewarding team during shifts.
  • Train and motivate team members on hygiene standards, cleaning techniques, and equipment handling.
  • Ensure proper grooming, punctuality, and discipline within the stewarding team.
  • Assist the Chief Steward in preparing duty rosters and monitoring attendance.
Inventory and Control
  • Monitor the usage of cleaning materials, equipment, and chemicals; report shortages or maintenance needs.
  • Assist in monthly inventory of operating equipment and report any damages or losses.
  • Ensure proper waste segregation and recycling procedures are followed.
Health, Safety, and Hygiene
  • Comply with hotel health and safety policies and HACCP standards.
  • Report accidents, injuries, and unsafe conditions immediately to the supervisor.
  • Ensure that pest control measures are implemented in all stewarding areas.
Qualifications
  • Minimum 2 years’ experience in stewarding, with at least 1 year in a supervisory or team leader role.
  • Knowledge of cleaning chemicals and hygiene standards (HACCP or equivalent certification preferred).
  • Strong leadership, communication, and organizational skills.
  • Ability to work in a fast-paced environment and handle multiple priorities.
  • Physically fit to perform cleaning and lifting duties.
