A Sous Chef for Conrad Dubai will work closely with the Executive Chef/Executive Sous Chef to ensure the smooth running of the kitchen, supporting with the food planning, preparation, hygiene and administrative tasks for the culinary department.

What will I be doing?

A Sous Chef for Conrad Dubai will be responsible for directing the kitchen team in providing consistency and quality of food, ensuring HACCP standards are followed, in order to achieve the maximum level of guest satisfaction and organizational profitability. Additionally, the Sous Chef will be required to conduct their duties at the highest standards:

  • Act as a coach and mentor; manage performance by setting objectives, deliver performance reviews, provide ongoing performance feedback, and administer corrective action when needed
  • Schedule, train, supervise, and participate in all team activities
  • Ability to supervise, lead, organize, and train a large number of team members
  • Conduct regular department walk-throughs and random food tastings to ensure standards and quality are followed
  • Have an extensive knowledge of all the menu and items including basic ingredients, methods of preparation, and presentation style
  • All sections of the kitchen are to be managed and brought up to brand standard across all disciplines
  • Actively creating new standards, recipes, descriptions, presentation
  • A Sous Chef must have and show a pro-active behavior in problem solving
  • Assist the Executive Chef/Executive Sous Chefs or lead all culinary aspects of food tastings, photo shooting, promotions of their respective outlet
  • Assist the Executive Chef/Executive Sous Chefs with creating, planning, cost calculating, recipe and implementation of new menus based on current food and market trends with the goal to drive up-sales and other revenue generating initiatives and guest satisfaction on a regular basis
  • Ensure all equipment is used in the right way and maintain, if it’s not up to required working standard, take the necessary steps and actions
  • Ensure compliance with Conrad brand standards
  • Ensure to secure and correct usages of equipment and supplies by all team members
  • Ensure proper segregation of food waste and other waste as by Hilton sustainability program
  • Creating unforgettable dining experiences for our guests, exceeding expectations with genuine Hilton hospitality
