Job summary

KERZNER INTERNATIONAL LIMITED in Dubai is seeking a Sous Chef - Butchery to lead all butchery operations, ensuring high standards of quality, safety and productivity. You will supervise fabrication of meat, poultry and seafood, manage inventory and yield, maintain HACCP, and collaborate with culinary teams to deliver exceptional guest experiences.

You will oversee a strong butchery team, coaching and developing staff while upholding brand standards in a fast-paced luxury resort environment,

Qualifications

• Experience as a Sous Chef or Junior Sous Chef in luxury high-volume settings with a focus on butchery.
• Strong knowledge of meat cuts, fabrication techniques, portion control and food safety.

About You

The ideal candidate will have previous experience as a Sous Chef or a strong Junior Sous Chef within a high-volume luxury hotel, resort, or large-scale food production environment, with a strong specialization in butchery. You possess excellent knowledge of meat cuts, fabrication techniques, portion control, and food safety practices. A hands-on leader with strong organizational skills, you thrive in fast-paced environments and are passionate about coaching and developing team members.
