Job summary

InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa is seeking a proactive Sous Chef – Main Kitchen to lead daily operations, guide the kitchen team, and uphold exceptional standards in taste, presentation and safety.

You will collaborate on menu development, cost control, and training, ensuring high performance during peak service in a luxury, international setting on Hayat Island.

Qualifications

• Previous experience as a Sous Chef or in a supervisory culinary role within luxury hotels or high-volume kitchens.
• A culinary qualification or relevant professional training is preferred.
• Strong knowledge of kitchen operations, cooking techniques and food safety standards.
• Experience supervising and developing a diverse culinary team.
• Knowledge of food costing, portion control, inventory and waste management.

Responsibilities

• Support the day-to-day operation of the Main Kitchen from mise en place to service.
• Lead and supervise chefs and kitchen staff, assigning duties for each service.
• Maintain high standards of taste, presentation and consistency across dishes.
• Assist with menu planning, recipe development, and new dishes introduction.
• Monitor portion control, stock levels and waste to manage costs.
• Ensure recipes and preparation methods meet standards and food safety guidelines.
• Train and develop culinary colleagues while fostering a positive kitchen environment.
• Coordinate with other culinary sections and F&B teams for smooth operations.
