Role overview

Under the general guidance and supervision of the Head Chef or delegate, and within the limits of established Calo policies, procedures, and the SOP Manual, you will be responsible for overseeing and directing all aspects of the operation in the Butchery Section.

Main Responsibilities

Daily responsibilities

  • Supervise and participate in the preparation of meat, poultry, and fish.
  • Ensure each section has a sufficient supply of meat, poultry, and fish.
  • Check all incoming and outgoing meat, poultry, and fish for quality and quantity, and advise the Sous Chef of any discrepancies.
  • Ensure proper storage of meat, poultry, and fish according to established standards.
  • Ensure that portion control policies and standard packing instructions are followed.
  • Review daily menus and guidelines to determine appropriate production loads.
  • Prepare daily requisitions based on forecasted menu requirements.
  • Coordinate with other sections regarding requirements, cleanliness, wastage, and cost control.
  • Maintain cleanliness and orderliness of the Butchery Section.
  • Ensure all equipment is correctly handled and maintained.
  • Establish and maintain effective employee relations.
  • Ensure that Calo's hygiene and sanitation standards are met.
  • Comply with Calo's Health, Safety & Hygiene policies.
  • Perform related duties and special projects as assigned.

Ideal Candidate

Qualifications

  • Professional kitchen apprenticeship or chef training course.
  • Experience leading kitchen team members.
  • At least 5 years of experience in quality establishments with large-volume butchery practices.
  • Good communication skills in English.
  • Knowledge of waste management is a plus.

Knowledge and Competency

  • Knowledge of various cooking methods, ingredients, and procedures, especially butchery.
  • Management skills.
