Wynn Al Marjan Island is currently seeking a Manager of Food & Beverage Training to join the resort’s Food & Beverage team.

About Wynn Al Marjan Island

On schedule to open in the United Arab Emirates in early 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offers 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five‑star spa. It is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.

Responsibilities
  • Define and implement the Food & Beverage training strategy, ensuring alignment with Wynn’s brand values and Forbes 5‑Star service standards.
  • Develop and manage structured certification pathways for all F&B roles, including service, bar, wine, mixology, and culinary positions.
  • Design engaging, modular training content covering menu knowledge, beverage expertise (wine, spirits, coffee, tea), and advanced selling techniques.
  • Lead daily training sessions, service simulations, and tastings to ensure consistency with operational and luxury standards.
  • Oversee the F&B training calendar, manage instructor assignments, and coordinate lesson plans for timely program delivery.
  • Implement a Train‑the‑Trainer model and develop Training Champions to reinforce on‑the‑floor learning and coaching.
  • Support restaurant and culinary teams during new service rollouts, menu launches, and key events to ensure flawless execution.
  • Assess team performance through practical evaluations, guest feedback, and maintain accurate training records with the LMS.
  • Continuously improve training programs using service audits, post‑training evaluations, and innovative learning methods (e.g., microlearning, VR/AR).
  • Develop and maintain clear Standard Operating Procedures (SOPs) and training guides for all F&B positions.
  • Collaborate closely with restaurant managers, chefs, HR, and L&D to align training with business goals and team needs.
  • Ensure all training incorporates food safety, HACCP, allergen protocols, and regulatory compliance requirements.
  • Integrate Wynn’s sustainability goals into training, promoting responsible sourcing, waste reduction, and water stewardship.
  • Lead, motivate, and develop the F&B Training team, fostering a culture of excellence, teamwork, and professional conduct.
  • Monitor trends in luxury dining and training technology, proactively updating training programs to maintain operational excellence and guest satisfaction.
About You
  • Degree or diploma in Hospitality Management, Adult Learning/Instructional Design, or related field.
  • Minimum 3 years’ experience in luxury F&B operations or training leadership, preferably with hands‑on academy management.
  • Expert in Forbes 5‑Star standards, luxury service protocols, and contemporary guest personalization.
  • Skilled in curriculum development, adult learning, and practical on‑site coaching.
  • Comprehensive knowledge of wine, spirits (WSET 2/3 or similar preferred), coffee, tea, and mixology.
  • Proficient with LMS, MS Office, and digital training tools; strong reporting and data management abilities.
  • Exceptional communicator and relationship builder with strong emotional intelligence.
  • Highly organized, detail‑oriented, and composed under pressure; committed to team development and hands‑on leadership.
