Job summary

Kerzner International is seeking a Demi Chef de Partie for One&Only The Palm in Dubai. You will assist the Chef de Partie, lead a section, and ensure Italian dishes meet the highest standards.

Qualifications

With the global growth of our brands, you will be an integral part of the Resort’s success, and your role goes beyond developing potential relationships where you will ensure quality and standards are maintained in line with the brand. You will ensure that all policies, procedures, and responsibilities are followed strictly while maintaining effective communication with your direct supervisor. All HACCP standards must be consistently followed and continuously improved. Guest requests should be handled with care, professionalism, and attention to detail to deliver exceptional dining experiences.

As a Demi Chef de Partie, you will assist the Chef de Partie in leading the team within the assigned kitchen section, ensuring the preparation and presentation of authentic Italian dishes to the highest standards. You will be responsible for maintaining quality, consistency, and food safety while supporting the daily operation of the kitchen. The role requires a strong understanding of Italian cuisine, ingredients, preparation methods, and culinary techniques. You will also support the training and development of team members to ensure standards are consistently maintained and will take charge of the section in the absence of the Chef de Partie when required. Maintain the highest levels of personal hygiene and grooming at all times in accordance with company standards.

A suitable candidate should have 2–3 years of experience in a similar role within a luxury 5-star hotel, resort, or high-end restaurant environment. Strong knowledge and hands‑on experience in Italian cuisine are essential. The candidate should be familiar with authentic Italian ingredients, preparation techniques, and presentation standards. He/She should possess excellent organizational and communication skills, a strong attention to detail, and the ability to work effectively in a fast‑paced kitchen environment. A passion for culinary excellence, commitment to food safety standards, and the ability to support and train junior team members are highly valued.
