The Deep-Fried Seafood Cook is responsible for preparing, battering, and frying a variety of seafood such as cod, haddock, shrimp, calamari, and similar products to ensure consistent quality, flavor, and presentation. The role requires mastery of frying techniques, precise oil and temperature control, and adherence to food safety and hygiene standards. Working in a fast-paced kitchen, the cook ensures all dishes are executed to perfection while maintaining a clean, organized, and efficient work environment.

Key Responsibilities
  1. Food Preparation & Cooking
    • Prepare, season, and batter seafood according to standardized recipes and portion guidelines.
    • Operate deep fryers efficiently, maintaining correct oil temperature and quality at all times.
    • Fry seafood and sides (e.g., fries, calamari, etc.) to a golden, crisp finish while ensuring tenderness and flavor.
    • Drain and present fried items attractively and consistently.
    • Prepare basic accompaniments such as sauces, lemon wedges, and garnishes.
  2. Quality Control & Food Safety
    • Inspect seafood deliveries for freshness, quality, and correct storage temperature.
    • Monitor oil condition, texture, and taste of fried products throughout the shift.
    • Follow HACCP principles and local food safety standards at all times.
    • Maintain accurate logs for fryer cleaning, oil changes, and temperature checks.
    • Report any equipment malfunction or food quality issues immediately to the Head Chef or Kitchen Manager.
  3. Kitchen Maintenance & Organization
    • Keep the frying station and surrounding area clean, sanitized, and well-stocked.
    • Filter, top-up, and replace frying oil as per schedule.
    • Clean fryers and utensils daily; ensure all surfaces are disinfected after each shift.
    • Manage storage of seafood and ingredients following FIFO (First In, First Out) methods.
    • Support with kitchen prep, waste management, and closing duties.
  4. Teamwork & Communication
    • Coordinate closely with the kitchen team to ensure timely preparation and service.
    • Communicate cooking times and order readiness clearly to the service counter or waitstaff.
    • Collaborate respectfully with colleagues and contribute to a positive kitchen atmosphere.
    • Support other sections when required, especially during rush periods.
Skills & Qualifications
  • Minimum 2–3 years of experience in a professional kitchen, ideally in seafood or deep-fried cuisine.
  • Proficiency in frying techniques, batter preparation, and oil management.
  • Strong understanding of food safety, hygiene, and cross-contamination prevention.
  • Ability to work under pressure in high-volume environments.

  • Basic knife and seafood prep skills.
  • Physically capable of standing for long hours, handling heat, and lifting up to 20 kg.
Preferred Qualifications
  • Previous experience in a fish & chips or fast-casual seafood kitchen.
  • Familiarity with UAE Municipality food safety standards and HACCP systems.
  • Food Safety or Hygiene Certification (Level 2 or equivalent).
  • Basic fryer maintenance and troubleshooting knowledge.
Working Conditions

  • Rotational shifts including weekends and holidays.
  • Mandatory uniform and protective gear (apron, gloves, hairnet).
