Job Requirements

The Commis – South Indian Chef is responsible for assisting in the preparation and cooking of authentic South Indian dishes while maintaining the highest standards of food quality, hygiene, and presentation. The role supports the kitchen team in ensuring smooth daily operations and consistency in taste, portioning, and plating.

Key Responsibilities
  • Prepare and cook a wide range of South Indian dishes such as dosa, idli, vada, sambar, chutneys, biryani, and curries under the supervision of the Chef de Partie.
  • Ensure proper mise-en-place before each service.
  • Follow standardized recipes and presentation guidelines.
  • Maintain cleanliness and organization of the kitchen and workstations at all times.
  • Monitor food stock and report shortages to supervisors.
  • Ensure compliance with food safety, sanitation, and hygiene standards (HACCP).
  • Assist in receiving, checking, and storing kitchen supplies properly.
  • Support senior chefs in menu development, tasting, and special functions.
  • Uphold teamwork and coordinate effectively with colleagues across kitchen sections.
Work Experience
  • Proven experience in South Indian cuisine preparation (hotel or restaurant experience preferred).
  • Strong knowledge of South Indian spices, ingredients, and cooking techniques.
  • Culinary diploma or certificate from a recognized institution preferred.
  • Basic understanding of food safety and hygiene practices.
  • Ability to work in a fast-paced environment and flexible with shifts.
  • Positive attitude, reliability, and strong teamwork skills.
