As a Chef de Partie – Pastry, you will be responsible for supporting the Pastry Kitchen leadership team in delivering consistently high-quality pastry and bakery items across all F&B outlets, in-room dining, and banquet operations. You will manage a specific section in the pastry kitchen, ensuring excellent mise en place, production, and presentation aligned with InterContinental standards.

Every day is different, but you’ll mostly do:

Pastry Production & Execution
  • Prepare and present a wide variety of desserts, baked goods, pastries, and breads in line with daily operations and special events.
  • Supervise and execute production for your designated section (e.g., bakery, desserts, chocolate, viennoiserie).
  • Maintain consistency, quality, and presentation standards across all pastry items.
  • Assist in the creation and implementation of new seasonal dessert menus, buffet themes, and à la carte items.
Team Supervision & Development
  • Guide and train demi chefs, commis, and trainees in your section.
  • Delegate tasks effectively while maintaining control of production timelines and standards.
  • Provide feedback and encourage professional development within the team.
Operational Excellence
  • Ensure all mise en place is prepared accurately and in a timely manner.
  • Maintain cleanliness and organization of your section in accordance with HACCP and food safety standards.
  • Control wastage and portion sizes to help manage food costs.
Collaboration & Communication
  • Work closely with the Sous Chef and Executive Pastry Chef to ensure smooth kitchen operations.
  • Coordinate with service staff and banquet teams to ensure timely delivery and presentation of all pastry items.
  • Communicate clearly and professionally across all levels of kitchen and service teams.
Compliance & Hygiene
  • Uphold and implement IHG food safety and hygiene standards.
  • Ensure strict adherence to health, safety, and sanitation regulations at all times.
  • Participate in regular kitchen audits, stock checks, and cleaning schedules.

What we need from you:

  • Culinary diploma or equivalent certification with a specialization in pastry arts.
  • Minimum 3–4 years’ experience in a high-volume, luxury pastry kitchen, with at least 1–2 years as a Demi Chef de Partie or similar role.
  • Experience in a 5-star hotel or fine dining environment strongly preferred.
  • Expertise in modern pastry techniques, plated desserts, chocolate work, and artisanal bakery.
  • Strong knowledge of international and Middle Eastern dessert trends is an advantage.
