About Wynn Al Marjan Island: On schedule to open in the United Arab Emirates in early 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theatre, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.

About The Position

Wynn Al Marjan Island is currently seeking a Beverage Manager to join the resort’s Food & Beverage team.

Responsibilities
  • Work with Executive Director Beverage/Assistant Director Beverage to establish par levels for supplies, liquor, beer, wine and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
  • Work with Executive Director Beverage/Assistant Director Beverage on implementation of policies, operating procedures, training programs, directives, menus, work schedules, rules and regulations for the beverage employees and personnel.
  • Maintain complete knowledge of all liquor brands, beers and non‑alcoholic selections available in outlets, the characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
  • Work with Executive Director Beverage/Assistant Director Beverage and Brand Partners to review and establish standards, staffing levels, recruitment strategy, alignment with hotel policies and SOPs, etc.
  • Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage. Maintain complete knowledge and strictly abide by state liquor regulations.
  • Manage beverage inventory and cost control.
  • Work with Executive Director Beverage/Assistant Director Beverage on the design and direction of special event beverage service set-up, working closely with the special events and banquets team.
  • Be aware of internal and external conditions and industry innovations and best practices and apply this knowledge as appropriate in managing the organization’s beverage operations.
  • Work with the Executive Director Beverage/Assistant Director Beverage on maintaining the financial performance of the Beverage department and conducting P&L analyses.
  • Work with Executive Director Beverage/Assistant Director Beverage to manage the annual budget for the beverage operation, including all beverage related revenue and cost accounts.
  • Work with Executive Director Beverage/Assistant Director Beverage to monitor the execution of key operational processes, such as training, quality/recipe control, steps of service, inventory and ordering processes.
  • Any other duties as assigned by management.

  • Demonstrated ability to oversee inventories for large‑scale establishments.
  • Ability to manage inventories of large operations.
  • Proven track record of fostering strong relationships with employees, guests, and management.
  • Excellent communication and presentation skills.
  • Results‑driven, with exceptional attention to detail and organizational abilities.
  • A passionate Food & Beverage professional with a deep understanding of current industry trends.
