Responsibilities
  • Carrying out accurate testing in the laboratory using specialised equipment, correctly handling and treating samples, accurately recording results and data, monitor and maintain compliance with legislation, maintain the highest standard of food safety for products.
  • Conduct daily analyses on control samples to evaluated equipment accuracy.
  • Analyses laboratory control samples to evaluated equipment accuracy.
  • Adherence to daily, weekly and monthly in-house equipment cleaning and maintenance programs.
  • Knowledgeable and proficient in all wheat flour and maize meal laboratory tests.
  • Familiar with and competent in test baking open top breads, scones and cakes.
  • Adherence to methodology and technique for all wheat flour and maize meal laboratory tests conducted.
  • Adherence to GLP and methodology when making up chemical solutions.
  • Maintain accuracy by means of self-audits against the applicable test methodology.
  • Analyses daily laboratory control samples to evaluate accuracy of technique.
  • Evaluates and immediately record and reports on results not within specification.
  • Conduct routine food chemistry analyses, including, but not limited to fat, moisture, protein, starch and ash determinations.
  • Perform regular rheological testing, including, but not limited to Alveograph, Dough Lab, Farinograph, Extensograph and Mixograph.
  • Complete daily quantitative testing including but not limited to protein, wet and dry gluten, falling number, granulation, etcetera.
  • Immediately follow-up, record and react to results not keeping within trend.
  • Provide accurate input with regards to laboratory test results.
  • Neat and legible recording of results.
  • Immediate reporting of results not keeping within trend.
  • Ensure Good Laboratory Practices are applied at all times.
  • Ensure correct PPE is used in accordance with safety standards.
  • Compliance to Environment and Risk policies and procedures.
  • Adherence to the Occupational Health & Safety Act.
  • Ensure that monthly safety and risk inspections are conducted.
  • Ensure that all inspections and tests are completed, risk control registers and check sheets are completed correctly and signed off.
