Job summary

AndBeyond Mnemba Island, Zanzibar is seeking a dedicated Sous Chef to lead our kitchen team to deliver exceptional guest dining experiences. You will manage daily operations, ensure high standards, control costs, and coordinate with the Executive Chef on menu quality and guest satisfaction.

The role requires formal culinary qualifications and 2+ years as a Sous Chef, ideally in a 5-star setting. A fast-paced environment, staff leadership, and attention to detail are essential.

Qualifications

• Must have formal culinary qualifications and at least 2 years of Sous Chef experience, ideally in a 5* operation.
• Excellent attention to detail, guest-focused and able to work under pressure.

Responsibilities

• Maintain high standards of professionalism within the team.
• Provide disciplined and inspirational leadership to the kitchen team and effective management for productivity and service excellence.
• Ensure financial and record-keeping controls and systems are adhered to.
• Work with Executive Chef to align menu and food with lodge quality standards.
• Monitor food scores and budgets with Exec Chef.
• Daily meetings with Heads of Department to discuss plans and guest needs.
• Ensure health and safety compliance, including Covid-19 and HACCP protocols.
• Oversee uniform orders and ensure staff wear correct uniforms.
• Manage orders within budget and oversee month-end stock takes.
• Ensure smooth daily kitchen and canteen operations.
• Introduce and maintain cleaning rosters per Tanzanian regulations.
• Record staff sick leave and rosters in the absence of the Executive Chef.
• Attend daily HOD meetings and hand over pertinent information.
• Ensure effective communication between kitchens, Lodge Managers, Guest Relations and Butlers.
