Job Title: Restaurant Manager

We are seeking an experienced Restaurant Manager to oversee the daily restaurant operations at a luxury five-star safari lodge. Reporting to the Food and Beverage Manager, this role is responsible for delivering consistent service standards, managing service teams, and ensuring smooth, professional dining experiences across all meal periods and special dining events.

Minimum Requirements
  • Proven experience as a Restaurant Manager or Senior Restaurant Supervisor in a luxury hotel or lodge environment
  • Strong knowledge of five-star service standards and fine-dining operations
  • Excellent leadership, communication, and people-management skills
  • Sound understanding of food safety, hygiene, and health & safety standards
  • Knowledge of South African liquor legislation and responsible service practices
  • Strong organisational skills with attention to detail
  • Ability to work flexible hours, including weekends and public holidays
Duties
  • Manage daily restaurant service including breakfast, lunch, dinner, and special dining experiences
  • Coordinate front-of-house operations with the kitchen and bar teams
  • Deliver consistent five-star service and oversee dining presentation standards
  • Engage with guests, manage dietary requirements, and resolve service issues
  • Supervise, train, and motivate restaurant service staff
  • Ensure compliance with hygiene, safety, and operational standards
  • Assist with stock control, equipment management, and cost control
  • Prepare service reports and support administrative and roster planning
