Qualifikationen

• Culinary qualification from SA or international institution.
• Chef apprenticeship completed.
• 2–3 years in a busy up-market kitchen.

Aufgaben

• Assist the Sous Chef with daily kitchen operations.
• Mentor and train junior chefs and trainees.
• Prepare and cook dishes to recipes and standards.
• Supervise station readiness and service.
• Ensure food safety, hygiene and cleanliness.
• Monitor quality, portions and presentation.
• Manage stock within the section.
• Coordinate with FOH and kitchen for timing.
• Manage pastry department budget and cost controls.
