Job summary

Kendrick Recruitment is seeking an experienced Head Chef to lead the kitchen of a luxury private game reserve in Paterson, Eastern Cape. The role requires strong leadership, culinary excellence and the ability to deliver exceptional dining experiences in a remote setting.

Salary is negotiable for the right candidate at R30,000 per month with live-in accommodation; meals are excluded, work cycle is 21 days on / 7 days off. Only candidates meeting the requirements will be considered.

Qualifications

• Previous experience as Head Chef or Executive Chef in luxury hospitality.
• Strong culinary skills and an understanding of fine dining.
• Excellent knowledge of dietary needs and allergies.
• Strong menu planning and food-costing abilities.
• Excellent communication and leadership skills.

Responsibilities

• Lead and manage the kitchen team to maintain high standards.
• Plan, prepare and oversee high-quality meals in line with luxury standards.
• Ensure food quality, presentation, taste and hygiene.
• Develop creative, varied menus for the lodge's guest profile.
• Cater for dietary requirements and allergies.
• Ensure service across all meal periods.
• Monitor stock levels, food costs and wastage.
• Assist with menu planning, ordering and stock management.
• Maintain kitchen cleanliness and food safety.
• Train and mentor junior kitchen staff.
• Collaborate with lodge management and front-of-house.
• Maintain accurate kitchen records.
• Ensure efficient operation of the kitchen at all times.
