Job summary

Minimalist Wines in Cape Town invites applications for its Harvest Internship 2027. This urban winery offers hands-on experience across grape processing, fermentation, cap management, barrel work, and vineyard sampling during the February–April harvest.

Interns receive a basic salary plus overtime, dinners on late shifts, and the chance to learn in a small, close-knit operation with minimal intervention winemaking in the city. Accommodation is not provided.

Responsibilities

• Grape processing: receiving and sorting grapes into the cellar
• Fermentation monitoring: taking sugar (Brix) and temperature readings
• Cap management: punch-downs and pump-overs
• Sanitation & cleaning: routine cleanliness of the cellar and equipment
• Racking & transfers: assisting with wine movements
• Barrel work: filling, emptying, washing and topping
• Vineyard sampling: trips to vineyards to collect ripeness samples ahead of picking
