Job summary

Hard Rock Casino Rockford is seeking a Kitchen Sanitation (Stewarding) Supervisor to lead the Stewarding team in maintaining the highest standards of cleanliness, sanitation, and safety across all food and beverage areas.

You will hire and mentor stewards, manage budgets and staffing, and ensure compliance with health inspection requirements while maintaining efficient operations within the kitchen and back-of-house areas.

Qualifications

  • High school diploma or equivalent.
  • A minimum of three (3) years' experience in a kitchen.
  • Prior supervisory experience preferred.

Responsibilities

  • Lead day-to-day Stewarding operations to ensure cleanliness and safety.
  • Hire, train, motivate, and manage Stewards to meet department objectives.
  • Develop and monitor standards, budgets, and staffing for efficient operation.
  • Direct back-of-house cleaning for kitchen, storage, dumpster, loading dock, and washing areas.
  • Assist inventory and distribution of china, glassware, linens, and silver.
  • Oversee equipment storage and issuance for F&B department.
  • Attend meetings and perform assigned follow-ups.
  • Maintain sanitation of work and public spaces.
  • Other duties as assigned.

Job Description:
POSITION SUMMARY:

The Kitchen Sanitation (Stewarding) Supervisor is responsible for leading the day-to-day operations of the Stewarding team, ensuring the highest standards of cleanliness, sanitation, safety, and organization throughout all food and beverage areas.

ESSENTIAL FUNCTIONS:

  • Creates an atmosphere that induces guests to make Hard Rock Casino Rockford their choice for gaming entertainment; responsible for actively building and retaining guest relations and acts as a mentor to team members to provide superior guest service.
  • Hires, trains, motivates, evaluates, and manages Stewards to ensure that team members receive adequate guidance and resources to accomplish established department objectives.
  • Develops, implements, and monitors department standards, guidelines, and objectives, and maintains other administrative processes such as budget and staffing to ensure proper planning and efficient operation of department.
  • Directs the maintenance of cleanliness of the back of the house areas, which include main kitchen, storage areas, dumpster, loading dock, TDR, and washing areas. Manage general cleaning schedule so that the food service areas meet or exceed the health inspection requirements.
  • Assists in the maintenance of the inventory and coordination of the distribution of all big four items: china, glassware, linens, and silver which also includes visual inspection to ensure cleanliness and safe transportation.
  • Controls equipment storage areas and the issuance of equipment for the Food & Beverage Department.
  • Attend and participate in meetings, completing follow-up as assigned.
  • Perform work regularly and predictably.
  • Responsible for cleaning and sanitizing work and public spaces.
  • Other duties as assigned.
NON-ESSENTIAL JOB FUNCTIONS
  • Attend seminars when needed.
EDUCATION AND /OR EXPERIENCE REQUIREMENTS:

(Related education and experience may be interchangeable on a year for year basis)

  • High school diploma or equivalent.
  • A minimum of three (3) years' experience in a kitchen.
  • Prior supervisory experience preferred.
ADDITIONAL REQUIREMENTS: (Licenses, Certifications, Testing, etc.):
  • Must obtain and maintain all licenses / certifications per Federal, State, and Illinois Gaming Board standards.
  • Must successfully pass background check.
  • Must be at least twenty-one (21) years of age.
  • Must be able to work nights, holidays and weekends, as well as flexible shifts.
KNOWLEDGE OF:
  • Pertinent federal, state, and local laws, codes, and regulations.
  • Dish machine operation and assembly.
  • Janitorial cleaning.
  • Familiar with handling of cleaning chemicals and compounds and preferred deep cleaning methods.
  • Kitchen work and equipment usage; familiar with cleaning of all types of kitchen equipment.
  • Understanding of labor budgets and financial statements.
  • Demonstrated organizational skills, budgeting experience and full understanding of financials.
ABILITY TO:
  • Communicate clearly and concisely, both orally and in writing.
  • Be flexible to work varying shifts and time schedules as needed.
  • Deliver programs which create a service level of excellence for internal and external guests.
  • Utilize training to the organization's strategic goals.
  • Communicate effectively with all levels of employees and outside contacts.
  • Review and comprehend all necessary documentation.
  • Inspect and maintain all areas for which are responsible.
  • Stock and retrieve supplies as needed.
