99 Ranch Market is seeking a detail-oriented Sushi Prep Assistant to support our Sushi Chefs with rice and ingredient preparation, assembly, and station cleanliness. This role offers hands-on experience in sushi production and growth opportunities within a large Asian supermarket family.

Location is Torrance, CA with full-time and part-time shifts. Duties include precise cutting, portion control, sanitation, and TV-style daily prep to ensure smooth daily production.

Qualifications

• High school diploma, GED, or equivalent is required.
• Prior kitchen or food preparation experience is preferred but not required.
• Valid Food Preparation / Food Handler Certificate is required prior to starting.
• Basic knife skills with a willingness to learn.
• Able to stay organized in a fast-paced, high-volume environment.
• Legally authorized to work in the United States without sponsorship.

Responsibilities

• Sushi ingredient preparation: wash, peel, and cut vegetables; prepare garnishes.
• Rice preparation: cook, season, and handle sushi rice per SOPs.
• Chef support: assist with ingredient prep, restocking, and assembly.
• Food portioning: weigh and portion ingredients accurately per recipes.
• Food safety & sanitation: follow safety regs and prevent cross-contamination.
• Kitchen cleaning: keep prep tables, boards, and equipment clean.
• Inventory & waste control: assist with receiving, FIFO, and minimizing waste.
• Production support: complete prep tasks to ensure chefs have needed ingredients.
