Job summary

Summit Club, located outside Las Vegas, NV, seeks a Sushi Cook to join the Food and Beverage Culinary Department. The Sushi Cook will craft fresh fish dishes and assist the Sushi Chef to ensure quality and consistency, contributing to the Discovery Land Company experience for members and staff.

The role requires culinary expertise, at least two years in a high-end sushi setting, and the ability to prepare Nigiri, Sashimi, and Rolls while maintaining safety and quality standards.

  • At least two years of culinary experience in high end sushi restaurants.
  • Extensive knowledge of sushi preparation.
  • Ability to filet fish to Chef’s expectations.

Responsibilities

  • Assist with member/guest issues in a professional manner.
  • Ensure high quality, presentation, and taste; prepared for menu checks.
  • Maintain sushi menu standards for consistency.
  • Report inventory needs and prep for service to minimize spoilage.
  • Complete cleaning schedules and daily temperature records.

This role will be located at one of Discovery Land Company’s locations: Summit Club, set outside of Las Vegas, NV.

Summit Club is seeking a Sushi Cook to join the Food and Beverage Culinary Department.

The Sushi Cook is responsible for crafting amazing fresh fish dishes for our guests and assisting the Sushi Chef with preparation to ensure quality and consistency. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities
  • Assist with any member or guest issues/concerns in a professional and courteous manner.
  • Ensure the items prepared are always of the highest quality possible, both in presentation and taste; Prepare for regular spot checks for menu accuracy and taste in all areas.
  • Understand and maintain sushi menu standards for exception and consistent service.
  • Anticipate daily business levels and communicate needs for inventory and preparations for service to minimize any spoiled or contaminated products.
  • Complete all cleaning schedules, temperature records, opening/closing checklists daily.
  • Ensure that spoiled or damaged serving utensils are not in use, i.e., cracked/chipped china, glassware, and train staff to do the same. Notify any non‑usable products to the Stewarding Supervisor to record as breakage and insure that par levels of equipment are kept up to date.
  • Champion a clean and safe work environment by ensuring all safety, health, and food handling standards are followed.
  • Recommend or present new menu items to the Sushi Chef utilizing research on new or local products, trends, and member requests which deliver on financial target and quality expectations.
  • Understand the quality and quantity of the ingredients, suggest modifications or other ingredients to be used.
  • Attend department meetings and trainings as necessary.
  • Any other duties as assigned.
Qualifications
  • Culinary degree or certificate strongly preferred.
  • At least two (2) years of culinary experience in high end sushi restaurants.
  • Extensive knowledge of sushi preparation.
  • Has complete knowledge and understanding of all cookery techniques and processes.
  • Ability to filet Bluefin Tuna, Yellowtail, and Salmon to Executive Chef’s expectations and standards.
  • Ability to clean speciality fish from Japan (Jikinme, Kamasu, Aji, Iwashi, Sayori, etc.) is a plus.
  • Consistently create Nigiri, Sashimi, and Rolls to Executive Chef’s standards.
  • Must be able to work in a high‑expectation sushi restaurant environment.
  • Thorough understanding of all occupational health and safety issues.
Additional Requirements
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.
  • Ability to work in a team environment.
  • Ability to stay calm and focused during the busiest of times.
  • Ability to read, write, speak, and understand English; additional languages preferred.
  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.
