Job summary

Trapper’s Sushi Co. in Surprise, AZ is seeking an experienced Sushi Chef to join our fast-paced, guest-focused team at the sushi bar. You will craft rolls, nigiri, sashimi, and specialty dishes with precision, while maintaining high standards and engaging with guests.

The ideal candidate has 1–3 years of sushi-prep experience, strong knife skills, and solid knowledge of food-safety and storage practices. Evening/weekend availability and a team-oriented mindset are essential.

Qualifications

  • 1–3 years of professional sushi-preparation experience preferred.
  • Experience preparing sushi rolls, nigiri, sashimi, and specialty dishes preferred.
  • Strong knife skills and knowledge of sushi-preparation techniques.
  • Understanding of food-safety, sanitation, allergen-awareness, and proper storage practices.
  • Ability to work in a fast-paced, high-volume environment with accuracy and consistency.
  • Strong attention to detail, organization, and presentation.
  • Clear verbal communication and guest-service skills.
  • Ability to manage multiple orders during busy service periods.
  • Ability to work independently while contributing to a collaborative team environment.
  • Valid food-handler certification must be obtained within the required timeframe.
  • Availability to work evenings, weekends, holidays, and variable shifts.

Responsibilities

  • Prepare sushi rolls, nigiri, sashimi, and specialty dishes per recipes and standards.
  • Inspect ingredients for freshness and proper preparation before use.
  • Store, label, date, and rotate ingredients in accordance with FIFO procedures.
  • Maintain a clean, organized sushi station throughout each shift.
  • Follow all food-safety, sanitation, allergen-awareness, and cross-contamination procedures.
  • Provide friendly and engaging service to guests at the sushi bar.
  • Answer guest questions about menu items and allergy concerns appropriately.
  • Collaborate with kitchen and front-of-house teams for efficient service and accurate order execution.
  • Monitor inventory levels and restock ingredients, supplies, and equipment as needed.
  • Support training and development of new sushi team members.
  • Maintain company standards for quality, portioning, consistency, and presentation.

You’re comfortable preparing sushi in view of guests, working with sharp tools, following food-safety procedures, and collaborating with both front-of-house and kitchen team members. You enjoy creating memorable guest experiences and contributing to a supportive, team-oriented workplace.

What You’ll Do
  • Prepare sushi rolls, nigiri, sashimi, and specialty dishes according to company recipes and presentation standards.
  • Inspect ingredients for freshness, quality, and proper preparation before use.

  • Maintain a clean, organized, and properly stocked sushi station throughout each shift.

  • Answer guest questions about menu items and communicate allergy or dietary concerns appropriately.
  • Collaborate with kitchen and front-of-house team members to maintain efficient service and accurate order execution.
  • Monitor inventory levels and restock ingredients, supplies, and equipment as needed.Complete assigned food preparation and opening or closing responsibilities.
  • Support the training and development of new sushi team members.
  • Maintain company standards for quality, portioning, consistency, and presentation.

The Physical Stuff
  • Restaurant-based work environment, including a busy kitchen and guest-facing sushi bar.
  • Ability to stand and walk for extended periods.
