Job summary

The Elia Group in Birmingham, MI is seeking an enthusiastic and professional Sushi Chef to start your career with The Elia Group. You will craft a fresh sushi menu and prepare maki, nigiri and sashimi to high standards.

Responsibilities

  • Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
  • Prepare all types of sushi, including maki, nigiri and sashimi
  • Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango and carrots)
  • Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate
  • Manage food prep activities, like boiling rice
  • Prepare exceptional meals according to standard recipes and venue specifications.
  • Prepare, arrange, and plate dishes per the current menu.
  • Adhere to culinary standards and regulations.
  • Function as a supportive team member during their shift.
  • Track, record and replenish inventory as needed and in accordance with established par levels.
  • Adhere to all standard operating procedures and sequence of service standards.
  • Maintain line of sight/atmosphere control by circulating through work area throughout shift.
  • Comply with all safety and health procedures as well as company and departmental policies and procedures.
