Hilton in Dana Point is seeking a driven Sous Chef to lead daily kitchen operations across outlets and banquets, delivering memorable dining experiences for guests at Waldorf Astoria Monarch Beach Resort & Club. This role requires hands-on leadership, menu development, and collaboration with Front of House to ensure seamless service and high standards.

As a key member of our culinary team, you’ll oversee prep, production lists, and safety compliance while mentoring staff and promoting a culture

• Lead culinary team operations: Provide hands-on leadership and in-the-moment coaching to kitchen staff, with focus on Outlets or Banquets
• Oversee production and service: Manage daily kitchen operations, including creating and monitoring production lists, completing line checks, and expediting service periods
• Enhance menu offerings: Develop and implement seasonal menus, promotional features, and daily specials
• Promote cross-department collaboration: Foster strong relationships between Front of House and Back of House teams for seamless operations
• Provide administrative support: Assist with inventory management, ordering, and scheduling
• Uphold regulatory standards: Maintain compliance with health, safety, sanitation, and alcohol awareness regulations

Located in the beautiful coastal town of Dana Point adjacent to Laguna Beach, this town played an iconic role in the emergence of California's surf culture and today is celebrated for its laid-back vibe and fun, active lifestyle. The resort is perched on 175 acres atop a 150-foot seaside bluff with over 400 rooms, 115,000 square feet of indoor and outdoor meeting space, and 8 food and Beverage outlets. This includes 4 restaurants, a beach club, lounge, marketplace, and in-room dining.
