Sous Chef – Meduza Mediterrania, New York City
Job Purpose
Under the general guidance of the Executive Chef and/or Chef de Cuisine, the Sous Chef serves as the back‑of‑house shift supervisor. Responsibilities include setting a positive tone and effective flow in the kitchen, overseeing opening and closing procedures, performing daily food safety and quality checks, and leading pre‑shift meetings. The Sous Chef also submits nightly reports, maintains vendor relationships, and communicates with front‑of‑house management regarding any important issues. Additionally, the Sous Chef assists with interviewing, selecting, and training staff as needed.
Duties & Functions
- Conduct opening procedures including receiving products, checking invoices, and completing temperature logs.
- Manage time for all back‑of‑house employees by overseeing breaks and labor cuts; assist with labor scheduling as required.
- Assist with budgeting and inventory, including counting food and dry goods.
- Ensure hygiene and safety protocols are implemented and enforced to the highest standard, including FIFO, proper labeling, and cooling/reheating logs.
- Assist with order scheduling, reservation order par adjustments, and troubleshooting supply‑chain issues.
- Ensure prep is completed properly and to company standards, including par adjustments and quality control checks.
- Train new hires on their stations and be available to cover any station as needed.
- Expedite food orders during service to manage ticket time, communicate with front‑of‑house, and maintain quality control.
- Conduct closing procedures, including line breakdown, invoicing, prep lists, and employee checkouts.
- Implement new menu rollouts and educate team members on them.
- Promote and enforce safe work practices, maintain safety standards, and file reports for incidents and hazards.
Qualifications
- High School diploma, GED, or equivalent preferred.
- Fully trained and capable of performing any back‑of‑house position; willing to train or cover stations as needed.
- Well organized, multi‑tasking, and detail oriented.
- Leadership skills with quick decision making in a fast‑paced, high‑pressure environment.
- Ability to develop and maintain positive working relationships, foster teamwork, and maintain confidentiality.
- Capable of overtime, weekends, evenings, holidays, and special events.
- Strong verbal and written communication skills in English; bilingual English/Spanish preferred.
- Basic computer skills required.
- Knowledge of industry health and safety regulations; current Manager Food Handlers card.
Physical Abilities
- Move, lift, carry, push, pull, and place objects weighing up to 50 pounds without assistance, and frequently lift and bend from the waist.
- Require standing, sitting, walking, repetitive motions, bending, climbing, hearing, and visual acuity in both daylight and nighttime lighting.
- Stand, sit, or walk for extended periods during an entire shift and perform repetitive motions.
- Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
- Use, carry, and operate all necessary equipment.
