SUMMARY

The Purchasing Manager ("Gerente de Compras") oversees all purchasing, receiving, and inventory control functions. This position serves as the property's primary procurement authority, responsible for sourcing and negotiating with suppliers, managing vendor relationships, and controlling food, beverage, and operating supply costs. The Purchasing Manager ensures efficient receiving and inventory practices, maintains compliance with company and health regulations, and partners with department leaders to support operational and financial objectives. Additionally, the Purchasing Manager recruits, develops, and leads the purchasing team while promoting operational efficiency and cost‑effective purchasing practices.

ESSENTIAL DUTIES

• Direct and oversee all procurement activities for food, beverage, operating supplies, equipment, and general hotel inventory while ensuring uninterrupted operations and optimal inventory levels.
• Manage all administrative aspects of the purchasing department, including recruiting, staffing, scheduling, training, meetings, and record keeping.
• Serve as the hotel's primary purchasing authority, sourcing, negotiating, and awarding business to vendors that provide the best combination of quality, service, reliability, and value.
• Develop and execute strategic sourcing initiatives that reduce purchasing costs without compromising product quality or guest satisfaction.
• Negotiate pricing, payment terms, rebates, volume discounts, freight charges, service agreements, and contract renewals to maximize purchasing power and improve profitability.
• Collaborate with the Executive Chef, Director of Food & Beverage, and department leaders to forecast purchasing requirements, menu changes, seasonal demand, and special events.
• Continuously evaluate supplier performance based on pricing, quality, delivery accuracy, food safety compliance, responsiveness, and service levels while building strong vendor partnerships.
• Ensure all purchases align with departmental budgets, forecasted occupancy levels, banquet activity, and operational demand.
• Recommend cost‑saving initiatives through menu engineering support, supplier negotiations, specification changes, packaging efficiencies, and inventory optimization.
• Monitor daily, weekly, and monthly purchasing expenditures against budget and investigate unfavorable cost variances.
• Drive food, beverage, and operating supply cost control initiatives through disciplined purchasing practices, strategic supplier management, and inventory optimization.
• Implement inventory control measures that reduce shrinkage, spoilage, over‑ordering, and product loss.
• Oversee the receipt and inspection of all deliveries, coordinate vendor (purveyor) delivery schedules, and ensure accuracy, quality, quantity, and compliance with purchase orders and company standards.
• Ensure proper storage and FIFO rotation of perishable and non‑perishable goods while maintaining a clean, safe, and organized storeroom.
• Maintain the cleanliness, organization, and safety of the loading dock and receiving areas.
• Ensures a clean and safe work environment as mandated by the Health Department and the company standards.
• Performs additional duties and responsibilities as directed by the leadership team.

QUALIFICATIONS

• At least 2‑3 progressive purchasing, procurement, inventory management, or related experience and/or training.
• A combination of experience, education, and/or training may be substituted for either requirement.
• Previous purchasing experience in a hotel, resort, or similar business entity preferred.
• Experience running a shift, scheduling, performance management, problem‑solving, running day‑to‑day operations, hospitality & customer service skills.
• Availability to work on weekends and holidays is required.
• Proficiency in procurement and inventory systems such as EPRO or equivalent software.
• Experienced in Microsoft Office Suite (Word, Excel, PowerPoint, Teams, Outlook).
• Must be able to attain a valid San Diego County Food Handler certification upon hire. Evans Hotels will provide this training and is to be completed at the company’s expense.
• RBS certification required.
• Must have an unexpired and valid driver's license with no recent violations.
• Ability to maintain a friendly, team‑oriented, positive attitude and a professional appearance at all times.
• Ability to stand, kneel, squat for prolonged periods of time, up to and including, the entire shift and lift up to 100 lbs.
• The following position will be filled in accordance with the process set forth in California Labor Code Section 2810.8 and San Diego Municipal Code 311.0101 et. seq.
