Job summary

Greencore USA is seeking a Bakery Process Supervisor to lead scale-up and commercialization of bakery products from development through full production. You will collaborate with R&D, Operations, Quality, Supply Chain, Engineering and Commercial teams to transfer products into manufacturing with top food safety and quality standards.

The right candidate has 5–7 years of bakery manufacturing experience, strong process optimization skills and a track record of successful factory commercialization.

Qualifications

  • Bachelor's degree in food-related field.
  • 5–7 years of experience in commercial bakery manufacturing.
  • Strong understanding of industrial bakery processing including breads, rolls, buns, cakes or laminated products.
  • Experience leading factory trials and product commercialization.
  • Knowledge of ingredient functionality and bakery formulation.
  • Experience with HACCP, GMP and food safety systems.
  • Understanding of manufacturing KPIs including yield, waste, efficiency and process capability.
  • Proficient in Microsoft Office applications.

Job description

The Bakery Process Supervisor is responsible for leading the successful scale‑up and commercialization of new and existing bakery products from development through to full production. Working closely with R&D, Operations, Quality, Supply Chain, Engineering and Commercial teams, the role ensures products are successfully transferred into manufacturing while maintaining the highest standards of food safety, quality, efficiency and cost.

The successful candidate will have a minimum of 5–7 years of bakery manufacturing experience with a strong understanding of industrial bakery processes, ingredient functionality, troubleshooting, process optimization and factory commercialization.

Key Responsibilities
  • Lead the planning, preparation and execution of bakery process development, and factory scale‑up trials and launches
  • Translate product concepts into robust manufacturing processes suitable for commercial production
  • Manage initial production runs to ensure product quality, process capability and manufacturing efficiency are achieved
  • Ensure all products meet customer specifications, food safety standards and internal quality requirements prior to launch
  • Support the Central R&D team in developing products compatible with manufacturing capabilities, making samples either in the kitchen or factory
  • Work closely with operations and finance to create the costings and AITB for the commercial team
Factory Trials & Process Development
  • Plan, coordinate and execute all bakery line trials
  • Prepare all trial documentation including raw material requests, production schedules and trial protocols
  • Coordinate trial requirements with Operations, Planning, Purchasing, Maintenance and Quality teams
  • Lead trial execution on the production floor while documenting processing parameters, observations and outcomes
  • Review trial performance with site teams and recommend process improvements
  • Identify opportunities to improve manufacturing efficiency, product consistency, waste reduction and yield
Technical Documentation
  • Prepare and maintain all factory documentation required for commercialization, including Scale‑up recipe

  • Validate BOM accuracy including raw materials, packaging codes, yields, scrap factors and units of measure

Product Quality & Food Safety
  • Ensure all trial and production activities comply with food safety, HACCP, GMP and company quality standards
  • Conduct product evaluations including sensory assessment and organoleptic reviews
  • Coordinate microbiological testing and shelf‑life studies
  • Review shelf‑life data and communicate findings to technical leadership
  • Conduct heating instruction validations and ensure all documentation is approved before launch
Cross‑Functional Collaboration
  • Attend and actively contribute to Feasibility Meeting

  • Lead pre‑production readiness meetings ensuring Packaging availability, Factory documentation completion, Raw material readiness
  • Monitor production yields and investigate variances
  • Recommend and implement process improvements following launch
  • Manage post‑launch change requests where required
  • Assess manufacturing equipment capability for new products
  • Support process optimization initiatives to improve throughput, quality and operational efficiency
  • Collaborate with Engineering and Operations on equipment improvements and process enhancements
  • Drive continuous improvement projects focused on waste reduction, yield improvement, and manufacturing consistency
Communication & Reporting
  • Communicate weekly trial schedules across cross‑functional teams
  • Prepare technical reports summarizing trial outcomes and commercialization readiness
  • Present findings and recommendations to technical and operational leadership
  • Maintain accurate records to support customer requirements and internal audits
Qualifications Required
  • Bachelor's Degree in Food Science, Food Technology, Bakery Science or related discipline
