Various shifts: Sunday – Saturday, including evenings and holidays as needed. (Up to 28 hours per week)

POSITION SUMMARY

Thirty Nine Enterprises, LLC is a subsidiary of First Americans Museum with the goal of driving First American Museum’s mission within food and beverage services. The Prep Cook plays a key role in the operations of Thirty Nine Restaurant and catering services. The Prep Cook is essential in ensuring the kitchen runs smoothly by preparing high-quality ingredients and assisting in creating memorable dishes. The Prep Cook has a passion for precision, organization, and supporting a team of culinary professionals.

DUTIES AND RESPONSIBILITIES
  • Prepare ingredients for menu items according to precise recipes, including washing, peeling, chopping, and slicing fruits, vegetables, and proteins.
  • Measure, weigh, and portion ingredients for efficient use during service.
  • Assist with the preparation of sauces, stocks, and other foundational elements of fine dining dishes.
  • Ensure mise en place is complete and properly organized before service.
  • Maintain cleanliness and organization of prep stations and storage areas.
  • Label and store prepared ingredients properly to maintain freshness and minimize waste.
  • Work closely with chefs and other team members to anticipate kitchen needs and adapt quickly during service.
  • Follow all kitchen procedures and recipes to maintain food consistency and quality
  • Assist with plating and garnish preparation during high-demand service periods, as directed.
  • Follow all food safety and sanitation guidelines at all times to maintain a hygienic and safe working environment.
  • Monitor the freshness and quality of ingredients, notifying supervisors of any issues.
  • Monitor Stock levels and communicates any shortages to the kitchen team
  • Operate kitchen equipment safely and report malfunctions or maintenance needs immediately.
  • Participate in cleaning duties, including washing cookware, wiping surfaces, and disposing of waste.
  • Assist with receiving, inspecting, and storing deliveries
  • Other duties as assigned.
QUALIFICATIONS

To be successful in this position, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

  • High school diploma or GED equivalent
  • 2-3 years of overall experience in a kitchen/restaurant back of house
  • Previous experience in a fine dining or upscale restaurant kitchen is preferred
  • Basic knife skills and understanding of culinary techniques
  • Knowledge of food safety and sanitation standards; ServSafe certification is a plus
  • Proven record of safe food and beverage handling skills
  • Strong organizational skills with the ability to adapt and re-organize effectively
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously
  • Positive team attitude and willingness to take direction from senior chefs and team members
  • Strong attention to detail, ensuring precise preparation and adherence to recipes
  • Ability to work with minimal supervision
  • Ability to work efficiently under pressure and meet deadlines
  • Excellent communication and teamwork skills
  • Physical stamina to stand for extended periods, able to handle exposure to hot and cold environments and ability to lift up to 50 pounds
  • Flexibility to work evenings, weekends, and holidays as required
  • Reliable and punctual

SUPERVISION:
The Prep Cook reports to the Executive Chef and Sous Chef.

GUIDELINES:
The Prep Cook is to adhere to the policies and ethics of Thirty Nine Enterprises, LLC at all times and ask for assistance on any matters or answers to any questions not covered by this job description.

SERVICE:
The Prep Cook provides services to assist with the food preparation, plating and handling guidelines laid out by the Executive Chef. Responds promptly to needs of the restaurant. Meets commitments.

We honor the indigenous people who inhabited these lands before the United States was established. They include the Apache, Caddo, Tonkawa, and Wichita. We also honor those tribes who have a historical relationship to this region, including the Comanche, Kiowa, Osage and Quapaw. We acknowledge the Muscogee (Creek) and Seminole who were once assigned the land upon which FAM resides.

Today, 39 distinct tribal nations reside in Oklahoma. We are as diverse culturally and linguistically as the nations on the European continent.

We are not in Oklahoma by choice. Many of our peoples were forcibly removed and relocated from the far reaches of the contiguous United States. After nearly 200 years, our histories and cultural lifeways are now interwoven into this landscape.

The Choctaw people call this land Okla Homma. Okla Homma means “red people”, the place we now call home.

Our National Story
Only a few tribal Nations were indigenous to what is now the State of Oklahoma. All others were removed from homelands across the contiguous U.S. to Indian Territory. In 1907 Oklahoma became the 46 th state to enter the union. The state’s name comes from two Choctaw words “Okla” and “Homma” meaning Red People.

Capable of handling large pots and pans, stacks of plates, and dish racks, lifting, pushing, and pulling up to 50 pounds; may be subject to extended periods of walking, standing, sitting, reaching, balancing, bending, kneeling, handling, feeling, climbing, and twisting; and vision, speech, and hearing sufficient to perform the essential tasks.
