Job summary

Dairy Farmers of America in California is seeking production operators to manage Table Operator, Brine Operator and RMC Operator duties on-site. Earn $25.00 per hour with a $1.00 shift differential for hours 6 PM–6 AM, plus overtime and benefits.

You will prepare vats, monitor pH, adjust cook temperatures, mold cheese, and submit lab samples while maintaining logs. The role requires basic math and English proficiency and adherence to GMP, HACCP and 5S standards.

Qualifications

• High School Diploma or GED preferred but not required.
• Basic math experience required.
• Must read, write and speak English.
• Overtime may be required.
• Safety programs (5S, HACCP, GMP, SQF) training expected.

Responsibilities

• Complete all Table Operator duties and responsibilities.
• Complete all Cooker/RMC Operator duties and responsibilities.
• Complete all Loader Operator duties and responsibilities.
• Prepare each vat according to recipe.
• Monitor curd pH's and add ingredients as needed.
• Adjust cheese cook temperatures as needed for different recipes.
• Mold cheese to proper weight and shape.
• Submit sample for lab testing.
• Take representative samples of vats to the lab for testing.
• Maintain good vat separation.
• Monitor the flow of incoming and outgoing cheese.
• Clean brine filters every 2 hours.
• Complete production logs accurately.
• Change RMC molds safely.

General Purpose:

Job Duties and Responsibilities:

• Complete all Table Operator duties and responsibilities
• Complete all Cooker/RMC Operator duties and responsibilities
• Complete all Loader Operator duties and responsibilities
• Prepare each vat according to recipe
• Monitor curd pH's and add ingredients as needed
• Adjust cheese cook temperatures as needed for different recipes
• Mold cheese to proper weight and shape
• Submit sample for lab testing
• Take representative samples of vats to the lab for testing
• Maintain good vat separation
• Monitor the flow of incoming and outgoing cheese

• Change RMC molds safely
• Clean and CIP the Cooker as needed
• Clean and CIP the Tables as needed
• Assist the CIP crew as needed
• Maintain work area up to 5S standards
• Maintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issues
• Dedicate effort to safety as we expect every employee to leave work in the same condition as they arrive
• Follow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirements
• Exhibit the values and ethics of Dairy Farmers of America through honesty, discretion, and sound judgment
• Adhere to all DFA Quality, Safety and GMP policies and procedures and report any nonconformity
• Attend required training, including but not limited to, Safety, GMP, Hazard Analysis and Critical Control Point (HACCP), and Safe Quality Foods (SQF)
• Responsible for monitoring and taking corrective actions when necessary for a critical control point as part of the plant HACCP plan
• Ensure that all documentation is done correctly and turned in promptly

Pay

• Competitive pay $25.00 per hour
• Rate includes $1.00 shift differential for hours worked between 6 PM and 6 AM

Education and Experience

• Must participate in the safety observation, 5S and Leader Standard Work program
