Job Description: Pastry Chef
The Pastry Chef is responsible for the production of all baked goods, pastries, and desserts for the restaurant.
Essential Functions:
- Perform daily inventory checks to prioritize product utilization.
- Identify and communicate inventory and equipment needs to the ordering manager.
- Meet daily with the executive chef to coordinate and ensure production standards.
- Assist in developing and maintaining pastry recipe books, including ingredients, product specifications, and portion sizes.
- Assist in developing dessert menus and items.
- Produce pastries for the restaurant and special functions.
- Prepare ingredients needed for pastry recipes.
- Prepare pastry items according to prescribed recipes.
- Maintain food quality standards, including consistency and presentation.
- Coordinate proper food storage following standard operating procedures.
- Work at the dessert station on the line when necessary.
- Use equipment safely and effectively in preparing menu items.
- Operate knives and utensils safely and efficiently.
- Operate independently if necessary.
- Maintain a clean and organized work area to ensure safety.
- Communicate problems to management immediately.
Accountabilities:
- Review catering function agendas daily.
- Confirm guest reservations with management to determine preparation quantities.
- Maintain a professional appearance and demeanor reflecting the restaurant's image.
- Be an active team player.
- Follow supervisor’s instructions.
- Work effectively under stressful conditions.
- Make sound judgment calls under pressure.
- Assist servers with pastry presentation.
- Keep the work area clean and ready for the next shift.
- Follow proper hand washing procedures.
- Communicate with the purchasing and product development teams about ordering needs.
- Review and update pastry item descriptions for service staff.
Qualifications:
Preferably a minimum of 1-year pastry chef experience in a full-service restaurant or equivalent.
Additional Requirements:
- Punctuality in personal scheduling.
- Maintain a professional appearance.
- Safely transport containers weighing up to 30 pounds.
- Stand and walk throughout the shift.
- Transport items safely across various surfaces and stairs.
- Work flexible hours, including nights, weekends, and holidays.
- Operate in variable environments with different temperatures and ventilation.
