As a Pastry Cook at Hilton Milwaukee, you will be responsible for all pastry preparation, production, and oversight of baked goods requested for all food and beverage outlets and banquet functions.

Connected to the newly expanded Baird Center, the Hilton Milwaukee City Center is Milwaukee’s largest hotel. Built in 1927 as the Schroeder Hotel, the Hilton Milwaukee offers 729 well-appointed guest rooms and over 34,000 square feet of meeting and event space. At the Hilton Milwaukee, we pride ourselves on continuous innovation through our approach to world-class service, upscale amenities, and superior style.

What you will be doing:

  1. Maintain high-quality pastry production and presentation according to standard recipes and banquet orders.
  2. Demonstrate creativity and passion in developing and revising pastry menus.
  3. Prepare requisitions for supplies and manage food items for workstation production.
  4. Ensure compliance with Health Department regulations through proper ordering, storage, and rotation of food products.
  5. Keep work areas clean and sanitized, adhering to health code standards.
  6. Supervise and train pastry staff, including hiring, counseling, and disciplinary actions.
  7. Analyze food costs to create cost-effective recipes without compromising quality.
  8. Assist in organizing special events, VIP parties, and staff functions, while maintaining production records and ensuring equipment maintenance, among other duties as assigned.

What we are looking for:

  1. High school diploma or GED preferred.
  2. 2-4 years of pastry/bakery production experience in high-volume settings, such as hotels, resorts, or upscale restaurants.
  3. Detail-oriented with the ability to work independently.
  4. Proficient in knife handling, cooking techniques, and basic prep functions.
  5. Basic English comprehension and math skills for recipes, measurements, and portion sizes.
  6. Manual dexterity for using kitchen equipment like knives, spoons, and slicers.
  7. Able to lift up to 100 pounds and work in confined, noisy spaces with extreme temperatures.
  8. Flexible schedule availability, including days, evenings, weekends, and holidays; ability to work under pressure.
  9. Ability to obtain any local, state, or federal license or certification for sanitation, liquor service, or food service certification.
