Job summary

Eataly is seeking a Pastry Chef to lead the pastry program, directing production of all pastries across counters and restaurants. You will manage a pastry team of about 10, hire, schedule, train and coach staff while ensuring quality, portion control and consistency in every item.

The role requires 6+ years in high-volume pastry, knowledge of Italian pastries, strong leadership and communication, and basic computer skills. Onsite work with evenings and weekends is expected.

Qualifications

• 6+ years of experience in a high-volume pastry position.
• Knowledge of Italian pastries and techniques.
• Outstanding communication and leadership skills.
• Intermediate computer skills.
• Degree from a post-secondary culinary/pastry arts training program preferred.

Responsibilities

• Directs and participates in the production of all pastry items for Eataly’s counters and restaurants
• Manages the pastry team: hires; schedules; submits payroll; provides feedback and motivation; trains on Italian pastry production, principles and practices; coaches and counsels; handles terminations
• Verifies all foods prepared meet quality standards in terms of portion size, flavor, texture and consistency
• Produces decorative centerpieces and special orders
• Orders and requisitions all supplies for the pastry shop
• Communicates with the Executive Chef and Pastry Quality Head on new recipes
• Maintains a clean and sanitary food production area according to Department of Health standards
• Performs other duties as required or assigned

Job Description

Pastry Chef

The Pastry Chef oversees the production of all pastries for an Eataly, including: Italian pasticcini, cakes, desserts, cookies, candies and other dolci. Reports directly to the Executive Chef and reports functionally to the Head of Pastry; manages a pastry team of about 10 employees.

Job Requirements

• Availability to work onsite with a flexible schedule often including evenings and weekends
• Ability to lift up to 50 poundsAbility to exert well‑paced mobility for up to 8 hours, including standing, walking, bending and squatting
• Ability to use a burning oven, commercial stand mixer and other pastry baking equipment

Salary Range

$70,000 - $80,000 annually
