Job summary

Qualifications

• Four-year college degree in meat science, animal science, food science or related field.
• One to three years of related and progressively responsible work in animal handling and slaughtering, cutting, processing or merchandising meat.
• Knowledge of safety and sanitation standards and USDA/USDA FSIS rules and GMPs.

Responsibilities

• Train and supervise student employees in slaughter, cutting, processing and merchandising of meat products.
• Enforce safety rules and sanitation programs (HACCP, GMPs) in all activities.
• Assist with sanitation procedures, recordkeeping and compliance with USDA guidelines.
• Coordinate with Meat Laboratory Manager and faculty for classroom activities and demonstrations.
