Job summary

Ben E. Keith Company is hiring for a meat department cutter in Elba, Alabama. The role focuses on cutting beef, pork, and other proteins to specification using a knife and band saw, preparing daily production, and ensuring product freshness.

You will train others, maintain sanitation, and operate packing areas while upholding safety and yield targets. Prior meat dept experience preferred; physical fitness required for lifting up to 75lbs.

Qualifications

• Experience in meat department operations preferred.
• Ability to read simple instructions and write basic notes.
• Ability to perform basic math for weights and measures.
• Must lift up to 75 lbs and stand for long periods.

Responsibilities

• Cut beef, pork, and other protein items to customer specifications.
• Plan and prepare cutting list for daily production.
• Inspect meat quality prior to cutting.
• Weigh, wrap, and box products.
• Check product dates for freshness.
• Train and develop department team members.
• Prepare packing rooms for daily production.
• Maintain sanitation of packing rooms.
• Maintain yield levels and proper inventory.
• Keep work area clean and safe.
• Operate band saw, Puma Slicer, and Chamber Vac machine.

Essential Duties and Responsibilities

• Utilizes knife and band saw to cut beef, pork, and various other protein items to customer specifications.
• Plan and prepare cutting list for daily production needs to exceed customer expectations and maximize gross profit.
• Properly inspects meat for quality prior to cutting to specification.
• Weighs, wraps, and boxes product for proper product presentation.
• Check product dates on each item for freshness.
• Train and develop existing and new department team members in proper meat cutting techniques.
• Assemble saws and inspect for damage.
• Prepare packing rooms for daily production.
• Responsible for proper sanitation of packing rooms.
• Establishes and maintains necessary yield levels for items produced.
• Ensures correct inventory is utilized based off date for product specs for freshness and/or aged product.
• Keep work area clean, orderly, and free from safety hazards.
• Sanitize department daily and ensure all safe food handling practices are adhered to.
• Responsible for operating Band saw, Puma Slicer, and Chamber Vac machine.

• Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
• Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.
• At least one year of experience working in a meat department operations preferred.

Physical Requirements

• Ability to safely and successfully perform the essential job functions consistent with the ADA, FMLA and other federal, state and local standards, including meeting qualitative and/or quantitative productivity standards.
• Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state and local standards.
• Must be able to lift and/or carry up to 75lbs.
• Must be able to multitask in a fast-paced work environment.
• Must be able to stand for long periods of time in wet and cold environment.
