Job summary

HEI Hotels & Resorts seeks a dedicated line cook for Claremont Resort & Club in the Berkeley area to prepare consistent, high-quality dishes and support a smooth kitchen operation.

You will start items prepared ahead of time, manage timing to avoid over-preparation, and ensure perishables are dated and stored correctly. The role emphasizes accuracy, teamwork, and adherence to safety and cost controls.

Qualifications

• Hotel experience preferred.
• Dexterity to operate food machinery with or without accommodation.
• Ability to lift and carry up to 100 lb with or without accommodation.
• Effective verbal and written communication skills, adaptable to different audiences.

Responsibilities

• Prepare food of consistent quality following recipes, standards, and checks from servers.
• Start items prepared ahead of time and avoid over-preparing estimated needs.
• Date and rotate perishables, maintain proper temperatures.
• Check pars for shift use, determine prep, freezer pull and line setup; note shortages.
• Return unused items to storage, cover and date perishables.
• Assist in plans to control food costs, waste, and usage per standards.
• Operate and clean fryer, broiler, stove, steamer, food processor, mixer, slicer, ovens, and grills.
• Comply with attendance rules and be available regularly.
• Perform other duties as assigned.

Compensation

Salary Range: $30.91 – $30.91 hourly. Tipped/service charge eligible? No. Discretionary performance bonus eligible? No.

Essential Duties and Responsibilities

• Prepare food of consistent quality following recipe cards and production and portion standards, per check from servers.
• Start food items that are prepared ahead of time, making sure not to over‑prepare estimated needs.
• Date all food containers and rotate as per HEI Hotels and Resorts standards, keeping all perishables at proper temperatures.
• Check pars for shift use, determine necessary preparation, freezer pull and line set up; note out‑of‑stock items or possible shortages, and assist in keeping buffet stocked.
• Return unused food items on the next shift to designated storage areas, covering/dating all perishables.
• Assist in setting up plans and actions to correct any food cost problems, control food waste, loss and usage per HEI Hotels and Resorts standards.
• Operate, maintain and properly clean fryer, broiler, stove, steamer, food processor, mixer, slicer, oven steam table, tilt kettle, waffle iron and flat‑top grill.
• Comply with attendance rules and be available to work on a regular basis.
• Perform any other job‑related duties as assigned.

Qualifications and Skills

• Hotel experience preferred.
• Finger/hand dexterity to operate food machinery with or without reasonable accommodation.
• Ability to grasp, lift and/or carry, or otherwise, move goods weighing up to 100 lb. on a continuous schedule with or without reasonable accommodation.
• Effective verbal and written communication skills; ability to adapt communication style to suit different audiences, such as supervisors, coworkers, public, etc.
