Job summary

Fontainebleau Las Vegas is seeking a Lead Utility Porter to manage sanitation of kitchen equipment and facilities and to coordinate the Utility Porter team. The role ensures standards are met and work is completed across all F&B venues.

The position supports management with training, onboarding, stand‑ups, and inventories. A high school diploma is required, and prior stewarding experience is preferred.

Qualifications

  • Must have a valid driver’s license and clean driving record.

Responsibilities

  • Maintain cleanliness and sanitation of work areas, kitchens, venues, and equipment per Health Department standards.
  • Clean and sanitize kitchen hoods, stoves, ovens, equipment, and surfaces.
  • Pick up and dispose of trash in all kitchens and venues.
  • Operate cleaning equipment and assist with dish and pot washing.
  • Assist management with training, onboarding, and daily stand‑up meetings.
  • Participate in inventories and requisitions as required.
  • Follow Hazardous Material Management procedures and SDS.
  • Support with staff coordination and ensuring coverage during shifts.
  • Work in a fast-paced environment with attention to safety and detail.

Job description

Position Overview

Lead Utility Porter is responsible for the overall cleaning and maintaining the sanitation of all kitchen equipment and kitchen facilities as well as the pick‑up and disposal of trash and cardboard. This position also assists management with coordinating and assisting the Utility Porter team in all aspects of the department, ensuring standards are met and work is completed.

Essential Duties and Responsibilities
  • Maintain cleanliness and sanitation of work areas, kitchens, food & beverage venues, and equipment in accordance with Health Department standards.
  • Clean and sanitize kitchen hoods, stoves, grills, ovens, broilers, burner tops, steamers, kettles, braisers, deep fryers, dishwasher machines, stainless steel counters, drains, etc.
  • Pick up and dispose of trash and cardboard in all kitchens and F&B venues.
  • Wash, clean, and polish equipment to ensure it is ready for use.
  • Clean entire kitchen areas including work areas, freezers, walk‑ins, walls, ceilings, hoods, fans, floors, drains, and any areas assigned by management.
  • Conduct various inventory counts when assigned and fill requisitions as required.
  • Follow Hazardous Material Management Program procedures for handling and disposing of chemicals, pesticides, blood‑borne pathogens, etc., using Safety Data Sheets (SDS).
  • Protect company tools, equipment, machines, and other assets in accordance with company policies and procedures.
  • Operate cleaning equipment and tools to ensure only clean and sanitary items are used in the kitchen, including operating the dish machine, pot‑scrubbing station, and trash compactor.
  • Assist with all aspects of dish washing & pot washing, sorting and cleaning dishes, silverware, glasses, utensils, and assorted items as assigned.
  • Act on the biohazard response clean‑up team.
  • Maintain a high standard of cleanliness and orderliness in all kitchens, F&B venues, back dock, dumpster, and utility work, as well as back‑of‑the‑house areas.
  • Operate machinery such as pallet jacks, electric pallet jacks, tuggers, forklifts, and mobile golf carts.
  • Provide advice and instruction to fellow members to enhance their performance.
  • Check workstations to ensure they are organized, clean, and correctly set up, and provide food safety audits as needed.
  • Ensure breaks and meal periods are organized efficiently and maintain schedule to ensure accurate coverage.
  • Communicate issues and member violations to Stewarding leadership.
  • Assist management with member work assignments and work details when necessary.
  • Assist management with training and onboarding new members.
  • Assist management with facilitating daily stand‑up meetings.
  • Assist management with inventories as needed.
  • Temporary or permanent duties and responsibilities may be added to or modified as deemed necessary.
Qualification Requirements
  • High School Diploma required.
  • Previous experience in stewarding preferred.
  • Some experience with inventory controls and systems, storeroom principles, and procurement processes preferred.
  • Ability to frequently climb, stand on, and work from a ladder, while working overhead for extended periods.
  • Ability to complete appropriate safety training and certifications to perform work tasks.
  • Develop and maintain positive and productive working relationships with other employees and departments.
  • Excellent interpersonal skills to deal effectively with guests, management, members, and other outside contacts.
  • Must have a valid driver’s license and clean driving record.
  • Excellent customer service skills.
  • Excellent organizational skills; ability to function under time constraints and deadlines with attention to detail.
  • Must be willing and able to work a flexible schedule to include holidays, nights, and weekends.
  • Work in a fast‑paced, busy, and somewhat stressful environment.
  • Must be at least 21 years of age.
