Ballerina Farm in Hideout, Utah, is seeking an experienced Head Cheesemaker to lead and grow a world-class cheese program. The role covers production, aging, and new product development, with a focus on soft-ripened cheeses and rigorous quality standards.

The ideal candidate will bring strong technical cheesemaking expertise, hands-on leadership, and a commitment to food safety, quality, and collaboration with culinary, retail, and e-commerce teams.

Qualifications

• Strong technical cheesemaking experience and a passion for science and craft.
• Ability to lead and train a team in a hands-on production environment.
• High standard for quality and consistency in dairy products.

Responsibilities

• Batch production: weigh, measure, and mix ingredients using established recipes for dairy products.
• Operate and monitor dairy equipment including pasteurizers and fillers.
• Perform daily sanitation using CIP/COP to meet safety standards.
• Monitor processing temperatures and times; conduct basic tests for fat and solids.
• Package finished goods with accurate labeling and move stock to cold storage.
• Maintain production logs and regulatory records (FDA/USDA).
• Lead cheese production, schedule, and coordination with inventory and sales.
• Document trials and record results to improve recipes and processes.
• Train and supervise staff on techniques, safety, and quality.
