Pyramid Global Hospitality in Orlando is seeking a Lead Cook for the JetBlue Lodge, a 200-room full-service hotel on the Orlando International Airport campus. You will lead a high-volume culinary team and contribute to daily production, menu execution, and training.

The ideal candidate has 3+ years of kitchen experience, strong allergy knowledge, and the ability to plan, cost, and supervise to deliver seasonal, high-quality meals in a fast-paced environment.

Qualifications

  • 3+ years of cook experience in a high-volume professional kitchen.
  • Active Food handler’s certification.
  • Strong knowledge of food allergens and safety practices.
  • Familiarity with state health codes and sanitation standards.
  • Ability to plan, cost, and implement menus with seasonal ingredients.

Responsibilities

  • Plan and execute daily production and food preparation for the hotel outlets.
  • Lead kitchen team, conduct daily briefings and training sessions.
  • Monitor inventory, par levels, and ordering in absence of executive chef.
  • Attend meetings and assist with menu costing and seasonal offerings.
  • Ensure food safety, cleanliness, and allergen controls throughout service.

It will feature approximately 1,000 square feet of meeting space, high-end café style eatery, bar/lounge and grab & go option, as well as various outdoor recreational facilities to encourage interaction amongst its guests. The Lodge will play host JetBlue’s new-hire orientation and training; on-going pilot, crew and flight attendant training; traditional pilot and crew overnights; JetBlue vendors and partners; and JetBlue executives. Its facilities will serve two purposes • to provide four-star lodging and service to these various JetBlue constituents, and serve as an extension of the training and culture that JetBlue aims to deliver within its Training Center. Serving as the “Living Room” for what will become the broader JetBlue Training Campus, the lodge will be a place for its guests to congregate, communicate, expound upon the day’s training lessons and programs, and socialize. All the while, the structure, style, service and culture will be that of JetBlue – creating consistent style, culture and messaging for guests throughout the broader JetBlue campus.What you will have an opportunity to do:We are looking for a leader and someone passionate about the culinary arts to join our Culinary team as a Lead Cook. This individual must have extensive experience working in a high-volume professional kitchen and be a college graduate in the culinary arts. This individual must be creative, motivated, and a passionate hands-on leader in the kitchen! Successful candidates for this role will have a proven track record of work with creative menus which reflect seasonal availability based on the concept of the restaurant, responds in a professional and courteous manner to guests and team, and enjoys being a teacher of the culinary arts supporting their team both personally and professionally.The Lead Cook will assist with planning and execution of the daily production, preparation, and presentation of all food for the hotel in a safe, sanitary work environment which conforms to all standards and regulations and achieves profitable competitive quality products.If you have a passion for the Culinary arts and are looking to join a team where you can develop your skills, the skills of your team and grow a career, then we want you!Your Role:You will act in the absence of the executive chef to complete the daily ordering using the current par levels for all outlets, employee cafeteria and banquets.You may be required to perform any function within the culinary department (cook, steward etc)You will conduct daily walk throughs of the kitchen, make recommendations for corrections, repairs, cleanliness concerns and improvements if needed.You will conduct daily meetings with the team to ensure their preparation, communicating all pertinent informationYou will attend weekly F&B meetings, BEO meetings, leadership meetings, monthly safety meeting and represent the culinary teamYou will be the example that the culinary team followsYou will manage the finances of the department, analyze, and control costs and manage the budget to achieve a profitable operationYou will have thorough knowledge of food allergens and handles any guest with food allergies with a high sense of urgencyYou will work with the culinary team to ensure prep sheets are updated and being properly used dailyYou will guide the nightly cleaning of all kitchen areas, follow up with pm stewarding crew to ensure dish area is clean and organized for the following days serviceYou will assist the Executive Chef in the creation, costing, and implementation of (seasonal) menus and special menusWhat are we looking for?Must be able to work long hours including weekends and holidays.Have a 3+ years’ experience as a cook in a high volume professional kitchenMust have basic allergy knowledgeMust have full knowledge of correct cooking temperatures of all vegetables and proteins, must be able to provide cutting tools needed to perform job as well as a calibrated food grade thermometer.Must have full knowledge of the state’s health codes as well as the eco sure food safety and health reportActive Food handler’s certificationRequires strong organizational skillsMust be able to work independentlyAble to be on your feet for long periods of timeAble to lift at least 50 poundsAt least 21 years of ageHave a desire to exceed expectationsAn energetic personalityCompensation:-Pyramid Global Hospitality is an equal opportunity employer.
