Under the direction of the Supervisor Steward, the Inventory Control Stock is responsible for accurate and efficient inventory control of all food and beverage products that supply the Food & Beverage (F&B) Department. Maintains and stocks all F&B related inventory at various locations and venues within the Enterprise.

Essential Duties And Responsibilities
  1. Manage the delivery of Food & Beverage products from vendors for all venues, maintaining accurate daily inventory levels and monitoring received products to ensure quantities and quality standards are met. Submit all required paperwork and perform daily transfers for accountability. Ensure inventory levels are adequate based on par levels, and that items are received, rotated, stored, and issued following FIFO standards.
  2. Recommend changes to par levels based on usage, perform monthly physical inventories, and ensure proper dating and labeling of products during receiving. Deliver products as needed, obtain signatures for documentation, and report safety violations or property damage.
  3. Review catering and banquet forms and menus with chefs, complete requisitions for food specials, and handle requests for artist and entertainment supplies. Communicate with Purchasing and Culinary management regarding delivery issues and restock inventory to prevent depletion.
  4. Clean, organize, and maintain all food & beverage storage areas. Receive and distribute linen and collect soiled linen from venues.
  5. Ensure proper execution of offsite product deliveries, including key management for off-site deliveries.
  6. Perform other duties as assigned to support departmental operations.
Educational, Experience And Qualifications
  • High School Diploma or GED required.
  • At least six months of experience in storeroom or inventory control operations required.
  • Must be at least 21 years old.
Knowledge, Skills And Abilities (KSA)
  • Proficiency in Microsoft Outlook and Word required; experience with Eatec software preferred.
  • Ability to read, write, and communicate effectively in English.
  • Basic mathematical skills.
  • Friendly and efficient customer service skills.
  • Effective communication with guests and team members.
  • Ability to work under pressure during busy periods.
Required Licenses, Certifications And Registrations
  • Possibly required to obtain and maintain a gaming license, depending on San Manuel Tribal Gaming Commission requirements.
  • Current Food Handler’s Card required.
  • Driving responsibilities: specify if applicable.
Physical Requirements/Working Conditions
  • Work environment is climate-controlled in a casino and resort setting.
  • Travel may be required for meetings, trade shows, and conferences.
  • Evening, weekend, and holiday shifts may be necessary.
  • Physical ability to exert up to 10 pounds of force occasionally and up to 40 pounds occasionally.
  • Sitting, standing, walking, stooping, kneeling, reaching, and other physical activities are required.
  • Visual, auditory, and mobility requirements are detailed for safety and efficiency.
