The state supported living centers serve people with intellectual and developmental disabilities who are medically fragile or who have behavioral problems. Performs routine (journey-level) food service supervisory work. Work involves supervising food preparation and service and ensuring prescribed sanitation and safety rules are maintained. Supervises the work of others. Works under moderate supervision, with limited latitude for the use of initiative and independent judgment.

Essential Job Functions (EJFs)
  • Attends work on a regular basis and may be required to work a specific shift schedule or, at times, even a rotating schedule, extended shift and/or overtime in accordance with agency leave policy and performs other duties as assigned.
  • Follows proper food handling in accordance to food service procedures, state, federal, and HACCP guidelines.
  • Prepares necessary paperwork in timely and correct manner.
  • Follows procedures for sanitation and storage of the dishes and food service equipment.
  • Follows required sanitation procedures for cleaning kitchen, stock room, food preparation areas, and satellite areas.
  • Observes safety procedures and practices.
  • Completes required training per policy.
  • Trains or assists in training new kitchen employees to assure a knowledgeable staff.
  • May oversee the work of other food services workers for short periods of time in the absence of the supervisor.
  • Supervises the preparation and serving of meals.
  • Supervises the setup of dining rooms for service and the designation of lines and equipment to be used.
  • Ensures dining, service, and food preparation areas are maintained in a clean manner and ensures food preparation equipment is properly cleaned and sanitized.
  • Inspects dining, service, and food preparation areas, and food conveyors, for compliance with sanitation, safety, and health regulations.
  • Instructs staff on safety rules and regulations, sanitary procedures, food preparation, and the operation of food service equipment.
  • Checks perishables and frozen foods for proper storage.
  • May ensure adequate controls are maintained over food preparation quantities and portion sizes.
  • May consult with cooks on food requirements and recipes to be used.
  • May assist in calculating food requirement estimates.
  • May assist in establishing food service regulations, procedures, and standards.
  • May assist in inspecting food items on arrival for quantity, quality, and temperature conditions.
  • Supervises the work of others.
  • Performs related work as assigned.
  • Other duties as assigned include but are not limited to actively participating and/or serving in a supporting role to meet the agency’s obligations for disaster response and/or recovery or Continuity of Operations (COOP) activation. Such participation may require an alternate shift pattern assignment and/or location.
Knowledge, Skills and Abilities (KSAs)
  • Knowledge of methods, materials, equipment, and appliances used in quantity food preparation and service; of food storage and preservation; and of sanitation regulations.
  • Skill in the operation, cleaning, and sanitizing of food service appliances and equipment.
  • Ability to calculate food requirements, and to supervise the work of others.
Registrations, Licensure Requirements or Certifications
  • Required Hazard analysis and critical control points (HACCP) Certification and are able to maintain local health jurisdiction's training, testing, and permitting requirements for Food Handling.
  • Must be willing to obtain food safety certification (ServSafe, Learn to Serve, or Food Protection Manager) within six months.
  • Must possess a valid Texas Driver’s License.
Initial Screening Criteria
  • Two years of work experience in food service, one of which must have been in a supervisory or managerial capacity.
  • Graduation from a standard senior high school, GED, or work experience.
Additional Information
  • Applicants must pass a fingerprint criminal background check, pre-employment drug screen, and registry checks including the Client Abuse/Neglect Reporting System (CANRS), Nurse Aide, Medication Aide and Employee Misconduct and HHS List of Excluded Individuals/ Entities (LEIE).
  • Males between the ages of 18 – 25 must be registered with the Selective Service.
  • All State Supported Living Center Employees are subject to Random Drug Testing.
  • Flexibility in work hours may be required for this position. The position may be required to work overtime and/or extended hours. Must be willing to work weekends and holidays.
  • All applicants must be at least 18 years of age to be considered for employment at a state-operated facility.
Final Selection Criteria
  • Completed State of Texas Application with detailed employment History required.
  • Stable work history with good work references required.
  • Knowledge of food production in mass quantity required.
  • Knowledge of overall food service operations or commercial food production is required.
  • Knowledge of food preparation methods, of food standards, and sanitation regulations preferred.
  • Experience in providing training to other staff in a food service environment preferred.
  • Evidence of good oral and written skill and ability to read.
  • Willingness to work weekends and holidays.
