Job summary

Levy, a member of Compass Group USA, seeks an Executive Sushi Chef to lead the sushi program at Intuit Dome. You will oversee menu development, culinary execution, food safety, purchasing, inventory, staffing, training, and financial performance while delivering a premium guest experience.

You will partner with the Executive Chef and culinary leadership to ensure quality, innovation, and operational excellence across all sushi operations and events.

Qualifications

  • 7+ years of progressive sushi culinary experience, including leadership in high-volume or premium hospitality environments.
  • Previous experience leading a sushi program or multi-outlet sushi operation preferred.
  • Expert knife skills and mastery of traditional and contemporary sushi preparation.
  • Strong knowledge of seafood sourcing, handling, and food safety regulations.
  • Experience managing food and labor costs.
  • Proven leadership, coaching, and team development skills.
  • Ability to thrive in a fast-paced sports and entertainment environment.

Responsibilities

  • Lead all day-to-day operations of the sushi program across concessions, premium clubs, suites, catering, and special events.
  • Develop and execute innovative sushi menus that align with Intuit Dome's premium culinary vision.
  • Maintain authentic sushi preparation techniques while incorporating modern culinary trends.
  • Ensure consistent execution, presentation, flavor, and portion standards.
  • Oversee all sushi production from prep through service.
  • Manage all sushi kitchen operations during concerts, sporting events, and private functions.
  • Develop production schedules to support high-volume event operations.
  • Ensure timely preparation and replenishment during peak service periods.
  • Partner with culinary leadership to continuously improve operational efficiencies.
  • Maintain organization, cleanliness, and sanitation throughout all sushi production areas.
  • Manage food cost, labor cost, and waste within established budgets.
  • Forecast product needs based on event attendance and business volume.
  • Monitor inventory levels and conduct regular inventory counts.
  • Approve purchasing while maintaining quality and cost standards.
  • Identify opportunities to improve profitability without compromising guest experience.
  • Recruit, train, coach, and develop sushi chefs and culinary team members.
  • Build a culture focused on accountability, teamwork, and continuous improvement.
  • Conduct performance coaching and provide ongoing feedback.
  • Develop cross-training programs to strengthen operational flexibility.

Position Summary

The Executive Sushi Chef is responsible for leading all aspects of the sushi program at Intuit Dome. This role oversees menu development, culinary execution, food safety, purchasing, inventory, staffing, training, and financial performance while delivering an exceptional premium guest experience. The Executive Sushi Chef partners closely with the Executive Chef and culinary leadership team to ensure the sushi program reflects the highest standards of quality, innovation, and operational excellence.

Key Responsibilities
Culinary Leadership
  • Lead all day-to-day operations of the sushi program across concessions, premium clubs, suites, catering, and special events.
  • Develop and execute innovative sushi menus that align with Intuit Dome's premium culinary vision.

  • Maintain strict food safety standards for raw fish handling and storage.
  • Verify product freshness, quality, and proper rotation.
  • Conduct regular quality audits and corrective action when needed.
  • Ensure all equipment is maintained and operating safely.
  • Build relationships with seafood vendors to source the highest quality products.
  • Evaluate new products and seasonal offerings.
  • Ensure sustainable sourcing practices whenever possible.
  • Monitor product quality and vendor performance.
Guest Experience
  • Deliver an elevated dining experience that exceeds guest expectations.
  • Support VIP experiences, premium hospitality events, and chef interactions.
  • Respond quickly to guest feedback and continuously improve the sushi program.
  • Showcase creativity and culinary innovation that enhances the Intuit Dome brand.
  • Partner with the Executive Chef and culinary leadership on menu planning and special events.
  • Collaborate with Premium Services, Operations, Purchasing, and Event Management teams.
  • Support company-wide culinary initiatives and special projects.
  • Assist with opening new concepts and seasonal menu launches.
